How To make Pumpkin Waffles
1 c Canned pumpkin puree
1 c Sour cream
1 c Milk
4 Eggs; separated
8 tb Unsalted butter; melted
1/4 c Packed dark brown sugar
1 3/4 c All-purpose flour
2 ts Baking powder
1/2 ts Baking soda
1/2 ts Salt
3/4 ts Cinnamon
1/4 ts Freshly grated nutmeg
GARNISH:
Sour cream Honey Chopped pecans Raisins Whisk together pumpkin, sour cream, milk, egg yolks, melted butter and brown sugar in a mixing bowl and reserve. In another mixing bowl combine the flour, baking powder, baking soda, salt, cinnamon and nutmeg. By hand, stir the dry ingredients into the liquid, and reserve. In a separate bowl, beat the egg whites until soft peaks form. Whisk one third of the beaten whites into the batter to lighten it. Then fold in the remaining whites. To make waffles, follow the manufacturer's instructions on your waffle iron. Serve with maple syrup or top each with a dollop of sour cream and a sprinkling of pecans, raisins and honey. Learn how to make waffles from scratch using pumpkin.
Fall/Halloween Recipes
Ingredients:
1 1/4 Cups Whole Wheat Pastry Flour (150g)
1/2 Teaspoon Baking Powder (2.5g)
1/4 Teaspoon Baking Soda (1.25g)
1 Teaspoon Cinnamon (1.4g)
1/2 Teaspoon Nutmeg (1g)
1/4 Teaspoon Ground Cloves (0.5g)
1 Cup Pumpkin Puree (246g)
3/4 Cup Milk or Milk Substitute (180ml)
2 Tablespoons Honey or Maple Syrup (30ml)
Directions:
1. In a large mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and cloves. Set aside.
2. In another bowl, whisk together the pumpkin, milk, and honey, stirring together until well combined. Pour this mixture into the dry ingredients, and stir just until smooth and well combined.
3. Heat a waffle iron and coat with cooking spray or butter. Spoon the batter into each waffle mold. Close and cook for about 2 to 3 minutes or until the waffles are cooked through and are golden brown. (The cooking time will also depend on each waffle iron. Serve warm.
