2 1/2 c Cooked brown rice
3 Green onions, chopped
1 c Low-fat cottage cheese
1 ts Dill weed
1/4 c Freshly grated Parmesan
-cheese 1/2 c Low-fat milk
1/2 ts Dijon-style mustard
Nonstick vegetable spray Combine all but the last ingredient in a mixing bowl. Pour into a casserole dish coated with nonstick vegetable spray. Bake in a preheated 350 degree oven for 15 to 20 minutes. Serves: 6 (3/4 cup servings)

Ingredients:
1 Tbsp oil
1 small onion, chopped
2 chicken breasts, cut into 1 cubes
1/4 tsp salt or to taste
1/4 tsp black pepper or to taste
2 tsp garlic, minced
1 cup cooked rice
1 can cream of chicken soup
2 cups chicken broth
2 cups broccoli florets
1 cup cheddar cheese, grated, mild or sharp
1-2 Tbsp sour cream, optional
1/2 cup Panko breadcrumbs
1/2 stick butter, melted
2 Tbsp grated parmesan cheese
Preheat the oven to 350 degrees. Add chicken and onions to a hot pan with 1 Tbsp oil. Season with salt and pepper, cook until chicken is browned. Add garlic and cook for 2 minutes. Add the rice, broth, soup, sour cream, and 1/2 cup cheese stirring to combine. Fold in the broccoli. Cook for 2 more minutes. Sprinkle remaining 1/2 cup cheese on top. Combine breadcrumbs with melted butter and parmesan cheese. Spread over top of chicken mixture. Bake for 30-35 minutes until golden brown and bubbly.

-Mild cheddar cheese
-2 packages of Knorr cheddar broccoli rice
-Country crock butter (2 tablespoons)
-Chicken stock (2 cups)
-Plain breadcrumbs (sprinkled on top)
