How to Make Teff Flour Pancakes: gluten free, no eggs, no dairy
I stumbled across teff flour by accident. I received a packet by mistake. I decided to keep it and experiment with Teff flour.
I googled to learn more about this unusual flour as I had never heard of it.
I discovered that teff flour is naturally gluten-free, with a smooth texture and a slightly earthy yet sweet flavour. For my first recipe, I thought it would be perfect to make pancakes.
In my recipe for how to make teff pancakes without eggs; I decided to add another flour, like tapioca to help improve the texture and structure as teff flour is super fine.
You could also add arrowroot flour or cornflour. I also increase the flavours adding cinnamon, vanilla and maple syrup to balance the earthy taste. I also wanted the challenge of making my recipe without any eggs. I made a flax egg from 1 tablespoon of ground flax seeds mixed with 3 tablespoons of water. After resting for 10 minutes this mixture becomes gel-like to mimic an egg. I have used soy milk but feel free to swap this for your preferred milk.
Due to Teff flour's naturally high protein content, it is suitable for gluten-free bread baking: peanut butter cookies, and chocolate chip cookies. I am slowly experimenting with more recipes.

I Made Flaky Scallion Pancakes From Scratch
One of my all-time favorites since day one! They're chewy, flaky and crispy, the best of all the worlds. Also great for if you're a scallion lover, like me.
Here's how to make my favorite scallion pancakes from scratch! This should make around 5 pieces, but you can make them bigger or smaller to your preference.

Ingredients:
PANCAKE DOUGH
2.5 cups flour
1/2 cup hot water (+ 1 tbsp if needed)
1/4 cup room temperature water
1 tbsp sugar
1 tsp salt
Lots of scallions
Oil
1/2 tbsp five spice powder
ROUX
1/2 cup oil
1/2 cup all-purpose flour
Steps:
1. Combine flour, sugar and salt in a bowl. Add in hot water slowly while stirring, then mix in room temperature water while continuing to stir.
2. Gently knead to form dough and continue kneading on floured surface for 10 minutes.
3. Put dough in a bowl and cover with a wet towel, rest for 30 minutes or more. (An hour would be even better if you have the patience!)
4. Chop scallions and make roux by mixing oil and flour in a saucepan, continue to mix over medium-low heat until thickened into a paste. Remove from heat and let cool slightly.
5. Roll out dough into a log shape and divide into five portions.
6. Roll out one piece of dough to as thin as possible, and brush on roux. Sprinkle on scallions and five spice powder.
7. Roll dough tightly into a log shape, then take one end of the dough and roll again onto itself to form a pinwheel shape. Gently flatten and brush on a thin layer of oil.
8. Let rest for 20 minutes or repeat steps for remaining dough.
9. Roll out dough to as thin as possible and pan fry each side until golden brown! You can sprinkle salt on at the end if you'd like too.

STARTER RECIPE:
Day 1:
Mix together 30 grams of whole wheat flour and 30 grams of warm (no warmer than 110 degrees F) chlorine free water in a very clean small jar. Cover loosely with a lid and mark the height of the starter with a rubber band or sharpie. Set aside in a warm spot out of direct sunlight.
Day 2:
Discard all but 30 grams of the starter from the previous day. Add 30 grams each of whole wheat flour and water. Cover and mark the height of the starter. Set aside in a warm spot out of direct sunlight.
Days 3-6:
Feed and care for the starter in the same way as day 2.
Day 7:
Make a mixture of 30 grams whole wheat flour and all purpose flour.
Discard all but 30 grams of the starter. Add 30 grams of the 50/50 flour blend and 30 grams of water and mix well. Cover with a lid and mark the height of the starter. Set aside in a warm spot out of direct sunlight.
If your starter begins doubling after 8-12 hours, start feeding it twice a day. If there is little activity, you're safe to feed it once a day.
Days 8-14
Begin feeding your starter with 30 grams of unbleached all-purpose flour and water.
