How To make Special Florentines
1 Cup Unsalted butter
8 Ounce Ground pecan
2/3 Cup Sugar
2/3 Cup Flaked coconut
2 Tablespoon Milk
2 Tablespoon All purpose flour
2 Teaspoon Vanilla
12 Ounce Coarsely chopped semisweet
-chocolate 2 Ounce Coarsely chopped unsweetened
-chocolate
Preheat oven to 350 deg. Line baking sheet with foil. Line work surface with waxed paper. Melt butter in heavy medium saucepan over low heat. Remove from heat. Add remaining ingredients except chocolate and stir well. Drop batter by rounded teaspoonfuls onto prepared sheet, spacing 4 inches apart (about 5 cookies per sheet). Keep remaining batter warm over very low heat. Bake cookies 10 minutes. Slip foil off sheet. Let cookies cool until firm, about 10 minutes. Using thin spatula, transfer cookies to waxed paper. Repeat with remaining cookie batter, stirring well before using.
Melt chocolates in double boiler over gently simmering water; stir until smooth. Take 2 cookies of similar size. Spread bottom of 1 cookie with 1 teaspoon melted chocolate. Top chocolate with second cookie, pressing gently to form "sandwich." Repeat with remaining cookies. Let cool. (Can be prepared 1 month ahead and frozen. Store between layers of waxed paper. Bring to room temperature before serving.)

Caramel + Nuts + Chocolate = Yes, please! // Florentines Recipe from Bake For Syria Cookbook
These aren't your average Florentines, the caramel in these florentines incorporate pomegranate molasses -- giving them an addicting tartness that perfectly compliments the dark chocolate and nuts. They're Syrian-inspired Florentines, a recipe by Jennifer Earle, of London's Chocolate Ecstasy Tours.
Her recipe can be found in the newly released cookbook Bake For Syria, which is a part of the global Cook For Syria movement, which started in London by a group of super awesome foodie influencers, curated by London's famous Instagrammer Clerkenwell Boy (@clerkenwellboyec1).
To make these Syrian Florentines, you'll need to set your oven to 160 degrees celsius/320 degrees F, and then the following ingredients:
40 g walnuts & 40g pistachios, chopped
40g butter
50g sugar
20g pomegranate molasses
20g flour
100g dark chocolate

Ingredients (Imperial / Metric Weights)
• 3 tablespoons Powdered Sugar (20 grams)
• 1 large egg white (30 grams)
• 2 tablespoons (40 grams) Honey
• 1 tablespoon melted butter
• 1 teaspoon grated Orange zest
• 2 cups (170 grams) sliced almonds
• 1/2 cup (80 grams) dark chocolate
Instructions:
Step 1 - Make the cookie mixture
1. In a mixing bowl, combine the powdered sugar, egg white, honey, melted butter, and grated orange zest.
2. Add the sliced almonds and stir until everything is evenly mixed.
Step 2 - Bake the cookies
1. Preheat your oven to 325°F (165°C).
2. Scoop about 2 tablespoons of the mixture and drop it onto a baking sheet lined with parchment paper. Repeat with the remaining mixture, spacing the cookies about 1 inch (2.5 cm) apart.
3. Bake one baking sheet at a time for about 20-30min minutes or until the edges are golden brown.
4. Remove the baking sheet from the oven and let the cookies cool completely.
Step 3 - Coat the cookies with chocolate
1. Melt the dark chocolate in a microwave or a double boiler.
2. Spoon about 1/2 tablespoon of melted chocolate onto the bottom of each cookie and spread it evenly.
3. Place the bottom of the cookie down on a sheet of parchment paper and let the chocolate set for about 30 minutes.
4. Once the chocolate has hardened, the cookies are ready to serve and enjoy!

Now what are Florentines, you may wonder… Arre nothing unusual bhai.. naam anokha but recipe very simple! ???? They are basically thin, crispy cookies made with mixed nuts & candies & coated with melted chocolate on one side .. Bola tha na.. it’s simple ????????
Also the gold dust gives it that perfect look for Dhanteras! Your toddlers will love these chocolate-coated biscuits & you will love the fact that it is filled with the goodness of almonds!
Almond Florentines
Ingredients
-Almond Slivers - 150 gm
-Castor sugar - 130 gm
-Honey - 75 gm
-Whipping Cream - 80 gm
-Dark Chocolate - 150 gm
Method
-Preheat the oven to 180°c for 10 minutes.
-In a pan, add castor sugar & whipping cream. On medium flame allow it to cook till the sugar is completely dissolved.
-Take the pan off the flame & add honey.
-Add the almond slices to a bowl & add the heated cream & sugar mixture to it. Put it in the freezer for atleast 30 minutes.
-On a baking tray put a silicone mat & with the help of a spoon add a small amount of almond mixture. Keep enough distance between 2 florentines as it expands when it bakes.
-Flatten the mixture a little on the mat, with the help of wet fingers.
-Bake the florentines at 180°c for 12 mins.
-Cut them into circles with the help of a cookie cutter while they are still hot.
-After they cool down completely, remove them from the silicone mat.
-Melt dark chocolate & with the help of a butter knife spread chocolate on the back of each florentine.
-Keep it in the fridge for 10-15 min.
-Garnish with gold dust.

INGREDIENTS-- 6 Dozen Cookies:
Pastry dough:
-132 grams butter
-66 grams icing sugar
-pinch of salt
-pinch of lemon zest (optional)
-17 grams egg yolk
-165 grams all purpose flour
Caramel filling:
-25 grams butter
-30 grams brown or yellow sugar
-30 grams glucose
-30 grams sliced almonds (chopped)
