How To make Spicy Harvest Pie
Robbie Shelton XXXJ77A 15 oz Pkg Pillsbury All Ready Pie
-Crusts
FILLING:
2 c Apples; unpeeled, shredded
1 c Zucchini; unpeeled, shredded
1/2 c Walnuts or Pecans; chopped
3 tb Flour
1 1/2 c Brown Sugar; firmly packed
1/4 c Butter or Margarine; melted
2 ts Cinnamon
1/2 ts Nutmeg
1/4 ts Salt
1 tb Lemon Juice
1 ts Vanilla
1 ts Orange Peel; grated
2 Eggs; beaten
1 Egg
1 tb Water
1 c Whipped Cream
Prepare pie crust according to package directions for two-crust pie using 9-inch pie pan.
Heat oven to 425F. In large bowl, combine apples, zucchini, carrots, nuts and flour; toss to coat. In medium bowl, beat brown sugar and margarine until well blended. Add cinnamon, nutmeg, salt, lemon juice, vanilla, orange peel and 2 eggs; blend well. Add to apple mixture; mix well. Spoon filling into pie crust-lined pan. Using 2 1/2 to 3-inch leaf cutter or paper patter, cut remaining crust into leaf shapes; arrange over filling. In small bowl, blend 1 egg and water, brush over edges of pie and leaf shapes. Bake at 425F for 40 to 50 minutes or until deep golden brown. Cover pie with foil during last 15 minutes of baking to prevent excessive browning. Serve warm with whipped cream. Store in refrigerator. Serves 8 to 10. TIP: If zucchini is large, cut in half lengthwise and remove seeds before shredding. This recipe comes from Pillsbury Classic Cookbooks "COUNtrY BAKING". What do with #leftovers? I made Chicken Pot Pie from #halfbakedharvest #SuperSimple #cookbook except I made some changes because I didn’t have all of the ingredients … but it turned out absolutely delicious! Perfect for the cold weather! ????❤️ #cozy #chickenpotpie #baking #cooking #traderjoes #traderjoespuffpastry #recipes #pie ????????
Changes I made:
- I used evaporated milk instead of regular milk
- I used 1 cup of #turkey broth and 2 cups of water instead of 3 cups chicken broth
- I added a handful of mushrooms
- I also didn’t have sage or thyme on hand so I used fresh mint and parsley instead and
- I also added the herbs at the end along with the chicken instead of at the beginning with the butter.
- I also baked for 30 mins instead of 40-45 and I used leftover #chicken from a #chickensoup I made earlier this week ????????

Cinnamon-spiced pears bake under a crunchy streusel topping in this easy pear crisp. Assemble the dessert ahead of time, and put it in the oven when guests arrive. Or bake it earlier in the day and serve it at room temperature. Serve with low-fat vanilla ice cream.

Ingredients for making harvest pear crisp:
6 cups bosc pears, cored and sliced
1 tablespoon fresh lemon juice
1/3 cup sugar
1 tablespoon cornstarch
1 1/2 teaspoons ground cinnamon
2/3 cup all-purpose flour
1/2 cup brown sugar
1/2 teaspoon salt
3 tablespoons cold butter
1 cup regular oats
1/2 cup sliced almonds (optional)
Instructions for making classic pear crisp:
- First in a large bowl add your pears
- Then add your fresh lemon juice
- Mix the two together
- Now in a separate bowl add your sugar to the bowl
- Followed by your cornstarch
- Then add your ground cinnamon
- Mix everything together
- Combine the contents of both bowls and mix
- In your baking dish pour in the pear mixture
- Now in a food processor add your flour
- And add the rest of your cinnamon
- Now add in your brown sugar and salt
- Now blend everything together
- You then want to add in your cold butter
- And blend everything together well
- Now add in your regular oats
- As well as your sliced almonds
- Give that a couple pules in the processor
- Now spread your oat mixture over the top of the pears
- Bake in the oven at 350F for 15 minutes
- Let cool and your harvest pear crisp is ready to serve

After playing around with the recipe, I have decided that heating the cream cheese for about 45 seconds in the microwave and whipping it a bit before adding it to the whipped cream yields the smoothest results.

1 cup heavy cream
1/4 cup sugar
1/2 tsp vanilla
16 oz can whole cranberry sauce
