3 Eggs
1/4 C Napolitos (Cactus)
1/4 C Monterrey Jack Cheese
1/4 C Chunky Salsa
Scramble 3 Eggs in a bowl. Pour into 8" Omlette Pan. Cook on high heat, continually stirring until bottom starts to set. Remove from heat. Put under broiler until eggs are no longer runny. Add Napolitos, Salsa and Cheese. Return to broiler until cheese is melted. Fold in half and serve.

Easy Southwest Omelette Recipe/ No Tofu Required / WFPB
An easy southwest omelette recipe that requires no tofu and is WFPB is what I will be sharing with you today. Have you ever heard of JUST EGG. Well this recipe is a copy cat with much cleaner ingredients and is WFPB. If you don't like tofu or can't eat it then this video is for your. The full recipe is below.
RECIPE FOR VEGAN EGG
1 cup yellow mung beans soaked over night
1 1/2 cups soy milk ( or any unsweetened plant milk)
1/2 to 1 tsp salt
1/4 tsp turmeric
1/4 tsp. onion powder
1/4 tsp smoked paprika
black pepper to taste
Rinse mung beans before soaking. After soaking discard water and rinse well.
Add all the ingredients into a blender and blend till smooth
RECIPE FOR SOUTHWEST OMELETTE
2 sliced mushrooms
1/2 cup frozen roasted bell pepper and onions
1/4 cup black beans
3 or 4 chopped cherry tomatoes
Add 2 T of water to a pre heated non stick skillet on medium heat. Add the mushrooms and cook for 3 minutes then add the peppers, onions, black beans and tomatoes and cook for 3 to 4 minutes. Then transfer to a bowl and set aside. Next wipe out the pan and preheat on medium heat. Make sure pan is preheated then add half of the egg mixture to the pan into an even layer. Cook the egg until the middle is almost set. Add the veggies to half of the omelette and fold over. You may have to use a spatula to gently loosen it before folding over. Cook for 2 minutes then flip and cook 2 minutes on the other side. Serve with salsa.
Serves 1 The left over vegan egg mixture will last about 5 days in the fridge.

Hey guys and welcome to my kitchen!
In this video I will show you how to create this super scrummy but simple recipe for a sweet omelette. Fill it up with any fruit that tickles your fancy for a treat breakfast, lunch or even a mid-ad break snack!
As a Slimming world consultant myself, I have created this Youtube channel as an additional support for my Slimming World members but everyone is welcome here. I hope that through my channel I can help to support and encourage everyone with eating their way to a healthy and happy lifestyle.
A bit about me: My name is Margaret and I joined Slimming World on September the 4th 2012. I was a type 2 diabetic on medication and a few weeks prior to my joining I received a very stark health warning from my GP. He basically said, 'change your lifestyle or you'll be dead in 5 years'. So having tried every diet that I can think of and having failed I finally found my local Slimming World group. I realised after the first week that things would be different this time. It was the first time ever that I wasn't hungry, that I could control my medication and I had a fabulous first week weight loss. 18 months later I reached my target, having lost over 4 and a half stones but more importantly my GP had begun to reduce my medication and finally after 2 years told me I no longer needed them. My blood sugars were perfect, my cholesterol was perfect and I have completely reversed my diabetes. I owe my life to Slimming World. In September 2015 I opened my first group in Hersham, Surrey, UK. Now I run three groups and love every minute of it!

Every Monday in All Saints Church Hall, Queens Road, Hersham, KT12 5LU. 9am, 11am, 5:30pm & 7:30pm
Every Friday at Esher Rugby Club, 369 Molesey Road, Hersham, KT12 3PF at 9:30am.

Easy air fryer omelette: super easy and ready in a few minutes!
INGREDIENTS
Eggs
Olive oil
Sat
Pepper
Onion powder
Tomato
Grated cheese
Spinach
METHOD
1. Place baking paper in the air fryer basket. Pour a little oil and 5 eggs.
2. Add salt, pepper, onion powder, and spinach.
3. Add grated cheese
4. Cook for 12 minutes at 180°C (356°F).
