How to Make a Tamale Pie with Masa Harina | The Frugal Chef
This tamale pie recipe is a delicious Tex-Mex casserole made with beef and a beautiful masa harina crust. Masa harina is very finely ground corn flour which has been dried. It is also used to make corn tortillas and tamales. You can find it in Hispanic grocery stores or, perhaps, in the Mexican aisle of your grocery store.
You can use fine cornmeal instead of the masa harina if you would prefer or can not find it. That will work perfectly fine, although the flavor might be slightly different.
If you are not a big beef eater you can certainly make this tamale pie with chicken. Simply cube it finely.

Serves eight
1 pound ground beef
2 TBS olive oil
1 large white onion – finely chopped
4 garlic cloves – minced
2 chipotle peppers in adobo – finely chopped
1 small green bell pepper – finely chopped
3 tomatoes – peeled and chopped
1 cup yellow corn kernels
1 cup tomato sauce
½ cup water
1 TBS ground cumin
1 TBS oregano
1 tsp. salt
1 tsp. black pepper
Heat some oil in a skillet and brown the beef. Drain it in a metal colander inside a bowl.
Wipe down the skillet and add more oil. Add the onion and cook for about 8 minutes – until soft, translucent and starting to brown. Add the garlic and chipotle and cook for a couple of minutes until fragrant.
Add the bell pepper and tomatoes. Stew the tomatoes for about 5 minutes. Return the beef to the skillet and add the corn. Add the tomato sauce and water. Mix. Add the cumin, oregano, salt and pepper. Mix well. Bring to a simmer and cook for about 15 to 20 minutes.
Remove cooked meat from skillet and place in a casserole dish.
Heat the oven to 350 degrees.
FOR THE TOPPING:
4 cups of water
1 tsp. salt
1 tsp. chili powder
1 ¼ cups masa harina or fine cornmeal
1 large egg
½ cup sour cream
½ cup shredded Cheddar cheese (optional)
Place the water in a pot – preferably a heavy one. Add the salt and chili powder. Mix. Slowly add the masa harina – whisking well every time. Cook for about 4 minutes until it resembles a thick batter.
Lightly beat the egg. Add the sour cream and whisk well. Slowly incorporate 1 cup of the hot masa harina in order to temper the egg. Mix well and pour into the pot with the remaining masa. Add cheese if using.
Pour the mixture on top of the meat. Place the casserole dish into the oven and bake for about 40 to 45 minutes – until meat is bubbly and masa is completely cooked through.
Remove from oven and allow sitting for about 10 minutes. Serve and enjoy!

Baking dish: Le Creuset cast iron roaster 5.25 qt ( 11.7’’x 16.8’’ ) :
✾ Cook the meat
3 lbs beef chuck roast, boneless
Salt and back pepper to taste : and
3 TBSP avocado oil :
12 cups water
✾ Aromatics for broth
1/2 medium white onion
1 ea head garlic
3 ea bay leaves :
1 tsp Mexican oregano, dry :
1 tsp all spice, whole :
2 tsp kosher salt
✾ For the sauce
8 ea chiles guajillos, dry :
2 ea ancho chiles, dry :
4 ea puya chiles, dry :
3 cups hot broth
1/2 cup water (swirl in blender)
4 ea garlic cloves, peeled
1 1/2 tsp onion powder :
1/2 tsp whole cumin :
2 TBSP avocado oil, to fry the sauce
1/4 ea medium white onion, sliced
Salt to taste, 1 1/2 tsp salt, kosher
✾ Corn husk

Tamale Pie
1 lb ground beef
1 cup of chunky salsa verde
1 (10 ounce) can Rotel, drained
1 box of Jiffy cornbread mix (plus ingredients to prepare the mix) OR use the cornbread mix of your choice
1 cup of corn
1 (4 oz) can chopped green chiles
1.5–2 cups of shredded cheddar cheese
Season according to taste
Preheat oven to 350. Brown the meat and drain the fat from the meat. Add the Rotel, corn, salsa verde and stir well. Turn off burner and add in desired amount of cheese.
Meanwhile, make corn muffin batter as directed on box. Stir in green chiles and at least a 1/2 cup of cheese.
Spoon the meat mixture into a 1 ½ quart baking dish. If you want a thinner cornbread crust, use a larger pan. Spread cornbread mixture over the meat. Bake for 45 minutes. If desired, top with additional shredded cheese during the last 5 minutes of baking.

Tamale Pie
Ingredients
1 pound lean ground beef
1 onion chopped
1 can diced green chilis
1 can rotel tomatoes
2 cloves garlic minced
2 tablespoons taco seasoning
¼ cup water
¾ cup enchilada sauce
2 cups cheddar cheese shredded, divided
Topping
1 box corn muffin mix 8.5 oz
½ cup sour cream
½ cup corn kernels canned, fresh, or frozen
⅓ cup milk
1 egg
green onions and tomatoes diced for garnish
Instructions
Preheat oven to 350ºF.
Combine beef, onion, green chilies, rotel tomatoes , and garlic in a cast iron skillet.
Cook until no pink remains. Drain any fat.
Add taco seasoning and ¼ cup water.
Simmer until water evaporates.
Stir in enchilada sauce.
Put meat mixture in a 9 X 13 dish
Top with ½ cup of cheese.
Combine corn muffin mix, sour cream, corn, milk ,and egg.
Spread over the beef mixture.
Top with remaining cheese and bake 30-40 minutes.
Garnish with green onions and tomatoes and serve.

INGREDIENTS
1.5 lbs shredded cooked chicken
add seasonings and spices to your preference
8 oz (227 g) pepper jack cheese
I used an 8 x 12 (2.7 quarts) baking dish
Bake at 400 F / 204 C for 23 to 25 minutes
**CORNBREAD MIX**
1 cup (140 g) yellow cornmeal
3/4 cup (98 g) all-purpose flour
1 Tbsp (15 g) baking powder
1/2 tsp (3 g) salt
2 Tbsp (25 g) sugar
1 large egg
1 1/4 cup (295 ml) milk
3 oz (85 g) pepper jack cheese
**ENCHILADA SAUCE**
1/4 cup (59 ml) cooking oil
1/4 cup (35 g) all-purpose flour
2 Tbls (12 g) chili powder
1/4 tsp ground cumin
1 tsp garlic powder
1 tsp onion powder
1 Tbsp (10 g) chicken bouillon
2 cups (473 ml) water
