TOKYO ICED TEA - Bright Green Long Island Iced Tea!
A simple variation on the Long Island Iced Tea. Substitute in Midori melon liqueur in place of the triple sec and voila - a bright green, potent cocktail with it's name most likely derived from the bright green Midori's home country.

INGREDIENTS
- 22.5mL Vodka (0.75 oz)
- 22.5mL Gin (0.75 oz)
- 22.5mL White Rum (0.75 oz)
- 22.5mL Blanco Tequila (0.75 oz)
- 22.5mL Midori Melon Liqueur (0.75 oz)
- 22.5mL Sour Mix (0.75 oz)
- Dash of Lemon Lime Soda
METHOD
Sour Mix:
1 Part Fresh Lime (or Lemon) Juice
1 Part Simple Syrup
Long Island Iced Tea:
1. Combine all the ingredients to your cocktail shaker (except soda)
2. Shake with ice
3. Strain over fresh ice into a high ball glass
4. Top with a dash of lemon lime soda
5. Garnish with a slice of lime or lemon

Surprising to some, the Long Island Iced Tea doesn't actually contain tea. Most likely named for it's tea-like appearance - this also hints to the drinks origins during prohibition when some drinks were made to look like tea.
During US prohibition in the 1920s there was a drink being concocted called the Old Man Bishop - created by Charles “Old Man” Bishop. This was in a small community called Long Island in Kingsport, Tennessee.
Legend has it that Bishop threw together his drink using rum, vodka, gin, tequila, whiskey instead of triple sec and also had the addition of maple syrup. His son later refined it in the 1940s making it closer to the well known Long Island Iced Tea recipe that we know today. It was this recipe that was featured in a Betty Crocker’s cookbook in 1961.
Another 10 or more years later we have another person that claims to be the creator of the Long Island Iced Tea, Bob “Rosebud” Butt. He claims to have created it for a cocktail competition for Triple Sec at the Oak Beach Inn on Long Island in the 1970s. His recipe closely reflects the recipe that most of us know today.
Originally the drink was most likely built over ice but a quick shake to combine the ingredients will do it justice. Rosebud's recipe calls for equal and full measures of each ingredient but I advise opting for 15mL/22.5mL (0.5 oz / 0.75 oz) measurements if you plan on remembering your night.

???? DIY Coffee Liqueur - like Kahlua, but better
When we started this process of figuring out how to make Kahlua coffee liqueur at home, we found most of the recipes were too sweet, and lacked complexity of flavour. They all had only one note - and it was weak coffee flavoured vodka. It just didn't work for us.
So we started our DIY Coffee Liqueur with fresh dark roasted coffee beans that we gently smashed in a mortar and pestle. We then added ½ a vanilla bean, and bathed this in 151º over proof rum. You really want to layer flavour over flavour, and the higher alcohol helps dissolve more of the oils in the coffee - it also keeps the final product from being to cloyingly sweet when you dilute it later with simple syrup. Rounding out the complex flavour profile is a cinnamon stick, some orange peel, and crushed cocoa nibs. The Dude would be proud!

Ingredients:
2 cups (500 mL) 151º overproof rum (75.5% alc)
1 cup (250 mL) dark roast ground coffee (we just smash in a mortar and pestle)
1/2 vanilla bean
½ cinnamon stick
2- 3 cocoa nibs, optional
1 slice of orange peel, optional
simple syrup

Method:
Slice the vanilla bean it open lengthwise and then scrape out the inside of the bean.
Place the bean, scrapings, course ground coffee and rum to a sealable Mason jar.
Give it a shake and set it aside someplace dark.
After 24 open the jar and toss in the cinnamon stick, cracked cocoa nibs, and orange peel.
Give it a shake and set aside for another day.
Strain the mixture through a coffee filter, and mix in the simple syrup… Now this is another place where your personal taste will come into play.
We like ours on the less sweet side so we start by mixing 1 part simple syrup to 3 parts coffee infusion; then we taste and start adjusting from there.
Ideally you want to end up with about 40% alc by volume.

How to Make MINT LIQUEUR - 4K UHD
This delicious MINT LIQUEUR recipe is the perfect substitute for any cocktail that requires CRÈME DE MENTHE or PEPPERMINT LIQUEUR. Since we use fresh mint leaves, our base recipe is amber in color…similar to mint tea. However, if you desire a deep green or colorless version, we’ve got you covered! As with all of our liqueur recipes, you can enjoy “skinny” cocktails if you make the low carb version using our recipe for KETO SIMPLE SYRUP (
INGREDIENTS
• 60 g (2 oz, or about 3 measured cups) mint leaves, stems removed*
• 480 ml (2 cups) vodka (100 proof is preferred)
• 15 ml (1/2 oz) peppermint extract
• 240 ml (1 cup) simple syrup ( or keto simple syrup (
• 6-10 drops green food coloring (optional)
DIRECTIONS
1. Wash and remove mint leaves from stems. Add to a resealable jar.
2. Pour in vodka, then peppermint extract.
3. Stir, then seal jar. Shake vigorously to infuse flavors.
4. Store jar in a cool, dark location such as a cupboard for 7 days. Shake daily.
5. After steeping for 7 days, pour and strain liquid into a pitcher.
6. Add the simple syrup (or keto simple syrup) and stir to blend.
7. Add optional green food coloring if a deep green color is desired.
8. Pour the liqueur into a swing top glass bottle or any resealable container.
*For a completely clear, colorless liqueur, increase the peppermint extract to 30 ml (1 oz) and omit the mint leaves and food coloring. Steeping is not required if the mint leaves are omitted.
**For a less sweet liqueur, decrease the simple syrup to 180 ml (3/4 cup)
