whipped tofu is honestly such a game changer & this truffle oil variation topped with garlicy, jammy roasted tomatoes might just be my favourite way to enjoy it- the ultimate dip imo ????
ingredients (serves 2)
400g firm tofu 3 garlic cloves, peeled 2 tbsp nutritional yeast juice of 1/2 a lemon 2 tbsp truffle oil 1 tsp garlic granules 250g cherry/plum tomatoes chives to garnish pine nuts to garnish
method
1. to start, preheat your oven to 220°C/200°C fan 2. at the tomatoes & garlic to an oven tray, drizzle generously with olive oil, season to taste & roast for 20-25 mins until blistered & jammy 3. meanwhile, make the whipped tofu. add the tofu, nutritional yeast, lemon juice, garlic granules & truffle oil to a blender, season with salt to taste then blitz until smooth & creamy 4. place this is the fridge while the tomatoes finish cooking & in the meantime, toast your pine nuts & bread of choice 5. spoon the tomatoes over a bed of tofu whip then top with pine nuts & chopped chives before scooping up with toasted bread
