You can omit anything you don't like including the red pepper flakes. You can add sour cream, green onions and cheese on top for extra flavor. This is similar to a casserole dish.

Ingredients I used for Hot Tamale Pie:
1 pound ground beef
1/2 medium onion
1/2 green bell pepper
1/2 cup green olives
15 oz can whole kernel corn (drained)
15 oz can black beans, I used 1/2 the can (drained and washed)
2 cups Kraft Mexican Four Cheese, shedded fine
6 oz can Hunts tomato paste
1 1/2 cup of beef stock, or more if needed
10 oz can Rotel Tomatoes and Green Chilies
15 oz box Famous Daves Recipe Cornbread Mix
1 teaspoon Badia Complete seasoning (add to meat only)
1/2 tablespoon McCormick Garlic Powder
1 teaspoon McCormick chili powder, plus more
1/2 teaspoon ground cumin, plus more
1/4 teaspoon McCormick ground black pepper
1 teaspoon red pepper flakes (optional)
1 teaspoon of sugar
Salt to tase, if needed
Sour Cream and Cheese on top (optional)

Baking dish: Le Creuset cast iron roaster 5.25 qt ( 11.7’’x 16.8’’ ) :
✾ Cook the meat
3 lbs beef chuck roast, boneless
Salt and back pepper to taste : and
3 TBSP avocado oil :
12 cups water
✾ Aromatics for broth
1/2 medium white onion
1 ea head garlic
3 ea bay leaves :
1 tsp Mexican oregano, dry :
1 tsp all spice, whole :
2 tsp kosher salt
✾ For the sauce
8 ea chiles guajillos, dry :
2 ea ancho chiles, dry :
4 ea puya chiles, dry :
3 cups hot broth
1/2 cup water (swirl in blender)
4 ea garlic cloves, peeled
1 1/2 tsp onion powder :
1/2 tsp whole cumin :
2 TBSP avocado oil, to fry the sauce
1/4 ea medium white onion, sliced
Salt to taste, 1 1/2 tsp salt, kosher
✾ Corn husk
25 ea corn husk :
✾ Masa/corn masa dough
8 cups corn masa harina, instant

Turkey Tamale Casserole
• 1 1/2 cups leftover turkey breast, skin removed
• 1 medium onion, diced
•
• ½ cup green bell pepper, diced
• 1 cup rinsed and drained canned black beans
• 1 cup corn, drained, canned or frozen (thawed if frozen), divided in half
• 1 cup tomato sauce
• 1 cup vegetable or chicken broth
• 1 tablespoon chile powder
• 1 teaspoon ground cumin
• ½ teaspoons garlic powder
• 1 teaspoons salt, plus more to taste
• ¼ teaspoon black pepper, plus more to taste
• 1 package Jiffy corn muffin mix
• 1 egg
• ⅓ cup milk
• 1 tablespoon vegetable oil
Directions:
• Preheat the oven to 425 degrees. Grease a 3-quart high-sided casserole dish with cooking spray. In a large skillet, saute the onion & green pepper over medium-high heat for 2-3 minutes. Then add the beans, half of your corn, chili powder, cumin, and garlic powder. Saute for
2-3 minutes. Add in turkey, tomato sauce, broth, salt and black pepper. Simmer for 10 minutes. Add to casserole dish. Note- the mixture will look very soup-like. This is okay! It will thicken up during the bake.
• Take the other half of your corn and roast in a pan in medium high hwat with salt & pepper to taste. No need to add oil, the corn will roast up fine on its own. Set aside to cool once roasted to golden - dark brown.
• In a medium bowl, whisk together the Jiffy corn muffin mix, roasted corn, egg, milk and oil until combined. Spoon & cover the turkey mixture with the corn bread topping. Bake until the corn bread is brown, 20 to 25 minutes. Take out to cool and wait an hour before serving.

Today I am making easy, delicious moist and tender turkey tamales. I make these tamales year round, but I love to make them for my family during the holidays with left over turkey. This is also a great recipe for the holidays.

INGREDIENTS
4 1/2 to 5 cups (1 L to 1.2 L ) broth or water
2 1/2 lbs (1.13 kg) shredded or chopped cooked turkey meat
1/2 small onion
3 to 4 cloves garlic
8 dried guajillo chiles (stems and seeds removed)
2 dried Pasilla chiles (stems and seeds removed)
2 dried ancho chiles (stems and seeds removed)
2 cloves garlic
4 cups (475 g) instant corn flour (I used Maseca brand)
2 1/2 tsp baking powder
1 1/4 cup (250 g) lard or shortening
salt to taste
2 Tbsp oil (to simmer puree)
40 to 50 corn husks
16 quart steamer pot
TURKEY
10 lbs Turkey (completely thawed)
1 Tbsp seasoning salt
2 tsp garlic powder
2 tsp onion powder
2 tsp lemon pepper
2 to 3 cups water or chicken broth to the bottom of the pan
INSTRUCTIONS
Shred or chop 2 1/2 lbs cooked turkey meat
CHILE PUREE
- remove stems, seeds and rinse the dried chiles
- place in a small pot, along with half of a small onion, 3 cloves garlic, cover with water, bring to a boil, remove from heat and steep until soft and pliable
- Once chiles are soft, remove from boiling liquid and place in to a blender along with 1 cup of broth or water, garlic, onion and puree well
- Strain puree for any bits that did not puree
- Reserve 1/3 cup of chile puree to add to masa dough
MEAT FILLING
- In a preheated skillet add 2 Tbsp oil, strained chili puree, salt to taste and simmer for 3 minutes over a medium heat
- Now add chopped meat to simmering chili puree and continue to combine and simmer for another 3 to 5 minutes
- Now set aside until ready to assemble tamales
MASA PREPARATION
- In a large bowl add instant corn flour, baking powder, salt to taste and combine well
- Now add lard or shortening, 1/3 cup of chile puree and combine well
- Next start by adding 2 cups of warm broth or water and mix well
- Now add an additional 1 to 1 1/2 cups of broth or water until masa dough is the texture of play dough and can squeeze through your fingers easily
NOTE: Keep extra warm water or broth on the sided just in case masa dough starts to dry out
TAMAL ASSEMBLY
- Take your softened presoaked corn husk and spread from the center 3 to 4 Tbsp of masa dough on the corn husk leaving a one inch space from the top of the husk
- Next add meat filling and enclose the tamal
- Now fold the bottom part of the husk up and continue the process
COOK TAMALES
- In a 16 quart steamer pot add 2 1/4 liters of water to the pot then place the steamer plate in
- Place a small heat proof ceramic or stone bowl upside down in the center and start stacking all of your tamales around the bowl
*NOTE: the cook time will vary depending how tightly you pack the pot
- Now place extra corn husks on top to cover tamales, a cloth and cover with the lid
- Bring the water to a boil first, lower the heat to a medium heat and cook for 1 hour 1/2 to 2 hours or once a tamal comes out easily from the corn husk
- Remove all the tamales from the pot and allow to set for at least 20 minutes then serve
- This recipe makes at least 40 tamales
