How To make Ultralight Chocolate Cake
8 Egg whites
1/2 c Unsweetened cocoa powder
1 c Sugar
3 T Vegetable oil, plus extra
-for the pan 2 T Cold brewed coffee
1/4 t Vanilla extract
1 Grated rind of small orange
1/2 c Whole almonds, toasted and
-finely ground 2 T Flour, + extra for the pan
2 T Confectioners' sugar
1 c Fresh berries
From "Little Meals" by Rozanne Gold (Villard Books, 1993). Preheat oven to 350'F. Beat 6 of the egg whites until stiff. Set aside. In medium bowl, combine cocoa with sugar, oil, remaining 2 egg whites, coffee, vanilla extract and orange rind. Mix ground almonds with flour and then add to cocoa mixture. Stir well. Add 1/3 of the beaten egg whites. Mix with rubber spatula. Then fold in the remainder of the beaten egg whites. Pour into an oiled and floured 8*" springform pan. Bake for 25 minutes at 350'F. (Be careful not to overbake.) Remove from oven and allow cake to sit for 10 minutes before removing from springform pan. Cool completely. Put dolly (or stencil of your choice) on top of cake. Sprinkle with confectioners' sugar, then remove dolly carefully, leaving lace design. Serve with fresh berries on the side. Make 6 little desserts. Per serving: 335 calories, 12 grams protein, 42 grams carbohydrates, 15 grams fat, 1 gram saturated fat, 0 milligrams cholesterol, 79 milligrams sodium.

What you'll need:
2 Teaspoons of baking powder
4 Medium eggs
200g Self raising flour (sifted)
200g Caster sugar (sifted)
200g Unsalted butter (room temperature)
A handful of fresh strawberries
1 Teaspoon vanilla extract
4 Heaped tablespoons strawberry or raspberry jam
For the buttercream:
340g Icing sugar
150g unsalted butter
1 Tsp Vailla
3 Tsp whole milk

Preheat your oven to 350 degrees and spray an 8x8 pyrex square or round dish to prevent sticking.
INGREDIENTS
1.5 cups of all purpose flour sifted 18sp
1 cup of sugar or sugar substitute (I used Stevia)
1tsp baking soda
3tbs or 1/4 cup of cocoa 1sp
1cup of cool water
1tbs lemon juice
1tbs vanilla
Pinch of salt
3tbs I can't believe its not butter light melted 4sp
3 tbs unsweetened applesauce
1tbs or more of sugar free chocolate chips (optional) 1sp
Optional :
Add nuts on top or inside too but account for the smart points
You can add ultra light cool whip once it's cooled or make a low fat icing (check out my recipes)!!
Directions :
Melt butter in microwave and set aside to cool (but not get hard!!)!
In a large bowl add sifted flour, sugar, salt, baking soda and cocoa and mix well.
In medium bowl add butter, water, vanilla, apple sauce and mix well
Add wet to dry ingredients mix well and incorporate all ingredients.
Place in Preheated oven for 30 minutes.
Keep in fridge or freezer.

This cute little bear cake is adapted from
Tres leches cake
Which literally means, “three milks” and it is an ultra light sponge cake soaked in a sweet milk mixture.
This time I am making my tres leches even more special.
By soaking my sponge cake with mixture of sweet milk, coffee liquor and white rhum
Trust me it taste so good
I like it so much and it is not overly sweet
The hint of coffee in the cake makes it even crowd pleasing desserts
It is very easy to make and perfect to be served after meal or gatherings

Sponge cake:
5 kuning telur
25g gula pasir (2 sdm)
60g minyak sayur (¼ cangkir)
2 sdt bubuk kopi instan
80ml Susu (⅓ cangkir)
90g tepung serbaguna (¾ gelas)
30g coklat bubuk (¼ cangkir)
1 ½ sdt Baking powder
5 Putih telur
65g gula pasir / ⅓ gelas
SUSU RENDAM
120ml Susu kental manis (½ gelas)
120ml Susu evaporasi (½ gelas)
⅛ cup white rhum/bacardi
¼cup coffee liquor /kahlua
Chocolate whipped Cream (Topping) :
375 gr Krim kental
65g gula pasir
4sdm coklat bubuk
100 gr coklat batang ( dilelehkan)
Tambahan
Chocolate powder for dusting
Chocolate for ears , nose and eyes
Chocolate sponge cake :
1. Panaskan oven dengan suhu 160C/320F
2. Lapisi loyang persegi 20 x 20 cm dengan baking paper
3. Campur susu, minyak dan aduk hingga menjadi satu. Tambahkan gula pasir dan aduk hingga gula larut
4. Ayak tepung terigu, baking powder dan coklat bubuk, lalu masukkan 2/3 bagian dalam campuran susu minyak, aduk raga
5. Pisahkan kuning telur dan putih telur lalu masukkan kuning telur secara bertahap ke adonan. Aduk rata. Masukkan sisa tepung, aduk rata
6. Meringue: kocok putih telur hingga berbusa lalu Tambahkan gula sedikit demi sedikit speed rendah hingga medium peak (aku: speed 1 - 3 menit)
7. Ambil ⅓ meringue ke dalam adonan kuning telur dan kocok hingga tercampur rata. Ambil lagi 1/3 bagian dan aduk rata.
8. Pindahkan adonan kuning telur ke sisa meringue dan aduk lipat dengan spatula.
9. Tuang adonan ke dalam loyang dan panggang selama 50-60 menit.
10. Keluarkan dari oven dan biarkan dingin sepenuhnya di rak kawat
12. Kelupas baking paper
13. Lapisi kembali loyang kue dengan kertas roti dan masukkan kembali kue ke dalam loyang
14. Tusuk2 cake dengan garpu
Milk bath:
1. Campur susu evaporasi, susu kental manis, kahlua dan rhum
3. Tuang campuran susu secara perlahan di atas kue, lalu tutup dengan plastik wrap
4. Simpan cake dalam kulkas 1 jam atau semalaman
Topping:
1. Lelehkan coklat
2. Mixer cream, choco powder dan gula hingga soft peak lalu tambahkan melted chocolate, aduk rata
3. Keluarkan kue dari loyang dan frosting dengan chocolate cream, ratakan bagian atas dan sampingnya
4. Trim pinggirannya, potong menjadi 9 bagian, taburi dengan coklat bubuk dan hias

NOLS Cookery Backpacking Chocolate Cake Recipe:
(For the 8 pan in this video I did half the recipe)
- Serves 4 from a 12-inch fry pan -
1 1/2 cups baking mix
1/2 cup flour
2/3 cup cocoa
2 level Tbs. powdered egg (or 2 real eggs)
Pinch of Salt
4 Tbs. brown sugar or honey
1 1/2 cups cold water (approx. - for a pourable batter)
2 to 3 Tbs. butter, melted
1 tsp. vanilla
Mix all dry ingredients. Add liquid ingredients and mix until lumps are gone. Pour into greased, flour fry pan. Cover and bake, using a twiggy fire, 15-25 minutes or until done.
