How To make Vegetable Kabobs
1 Small eggplant about 3/4 lb.
- cut into 2" cubes 3 Medium carrots sliced 1/2"
8 Small red potatoes
3 Medium zucchini sliced 1"
1 Large red or green pepper
- seeded and cut into 1" sq. 2 Medium onions cut in wedges
- separate wedges into 2-3 - layers each 16 Whole mushrooms
Herb marinade (see - following recipe) Salt and pepper to taste Cook eggplant in 1" boiling water for 3 minutes and drain. Cook carrots in 1" boiling water until just tender crisp and drain. Cook unpeeled potatoes in 1" boiling water for approximately 15 - 20 minutes. Drain and cut in half. Place eggplant, carrots, potatoes, zucchini, peppers, onions and mushrooms in a large plastic bag. Add marinade, seal bag well. Refrigerate for 2 hours or overnight. Drain vegetables and reserve marinade. Using 8 metal skewers, thread vegetables, alternating varieties. Place on lightly greased grill, over low heat. Cook, turning often, basting with the reserved marinade for 10 - 15 minutes, or until vegetables are tender. Sprinkle lightly with salt before serving. Remaining marinade can be used again. It can be refrigerated for up to 2 weeks. NOTE: if wooden skewers are used, soak them in water for 15 - 20 minutes before using. This prevents the wood from burning.

This recipe was really tasty. I cut up a bunch of veggies and I thought there was no way that we could finish all of them between the two of us. But of course, Garbage Disposal and I finished all but a few pieces.
Thought I should note that I'm not only on a veggie kick, but also on a grilling kick. I bet my neighbors think I'm insane with my tripod and camera out on the back deck filming in my 80's pants. Or really awesome...

Ingredients: Serves about 3-4 (or in our case, 2)
1 large zucchini, cut into 1/2 inch rounds
6-8 white mushrooms
10 cherry tomatoes
1/4-1/2 red onion, cut into chunks (depending on how much onion you like to eat - I like a lot)
1 green bell pepper, cut into chunks
1 red pepper, cut into chunks
8-10 small boiled red potatoes, kept whole or cut in 1/2 depending on how large they are
2-3 tbsp olive oil
Splash of ponzu or soy sauce (gluten-free)
1 tbsp sriracha
1 tbsp balsamic vinegar
1 tbsp honey
4 cloves pressed garlic
Salt & pepper to taste

Instructions:
Grab your favorite fruit and veggies. We recommend tomatoes, zucchini, tomatoes, onion, peppers, and pineapple. Cut them into small pieces.
Soak wood skewers in water for at least 15 minutes. Then thread the fruit and vegetable pieces onto the skewers.
Place the kebabs in a shallow pan and cover with Italian dressing. Sprinkle with Grilla Grills AP rub and let soak for 15 minutes.
Heat your Kong to 300 degrees and then place the skewers on the grill. Rotate every 10 minutes until you're happy with the color.
