How To make Vegetable Tamale Pie
VEGETABLE FILLING:
14 oz Beans, cooked pinto; drained
1 c Onion, white; chopped
1/2 c Pepper, green bell; cubed
2 Pepper, jalapeno; seeded and
-chopped 2 c Tomatoes, chopped canned;
-drained 1/2 c Pepper, red bell; cubed
6 oz Cheese, sharp cheddar;
-grated 8 Olives, ripe; sliced
3/4 ts Garlic
3/4 ts Cumin, ground
3/4 ts Chile powder
TAMALE TOPPING:
1/2 c Flour, all purpose
1 tb Flour, all purpose; (add to
-above) 1 1/2 ts Baking powder
3 3/4 oz Cornmeal, yellow
1/2 ts Baking soda
1/8 ts Salt
1 lg Egg; @ room temp
1/2 c Yogurt, plain
2 ts Margarine; melted & cooled
1 tb Chives; cut to garnish, opt.
Preheat oven to 375?F. Spray an 8"x8" pan with non-stick cooking spray. Into prepared baking pan, place all filling ingredients. Toss until well mixed; set aside. To prepare tamale topping, in medium bowl, place flour, cornmeal, baking powder, baking soda, and salt; stir until evenly mixed. In a small bowl, beat yogurt, egg and margarine. Add to dry ingredients and stir just until dry ingredients are moistened. Spoon mixture evenly on top of vegatable filling. If desired, sprinkle evenly with chives. Bake 35-40 minutes, until filling is hot and bubbly, topping is lightly browned and a toothpick inserted in center of topping comes clean.

TAMALE PIE MADE WITH MASA HARINA: Delicious, More Authentic Recipe w/Ground Beef, Corn & HATCH CHILE
Let's face it, there's no substitute for tamales, but this Tamale Pie made with Masa Harina is at least closer to the flavor profile of tamales because it's not made with corn bread. It's really delicious! Masa Harina is a corn masa flour. I typically buy Maseca brand, in case you're looking for it in the grocery store and aren't sure you've got the right thing. Read on for the recipe.
Tamale Pie
1 lb. lean ground beef
1/2 chopped white or yellow onion
2 minced garlic cloves
1 15oz. can corn, drained
1 can crushed tomatoes
1/2 cup chopped Hatch green chile
1 Tbsp. red chile powder
1 Tbsp. cumin
salt to taste (I use about 1 tsp.)
approx. 1 cup grated cheddar cheese
For the dough topping:
2 cups masa harina (I use Maseca brand)
1 tsp. baking powder
1 tsp. salt
1/2 cup melted fat (I use butter. You can also use lard or vegetable oil.)
1 1/2 cups warm chicken broth
In large skillet over medium high heat, brown ground beef. Add in chopped onion and fry until translucent. Add in all other ingredients: minced garlic, crushed tomatoes, corn, green chile. Season with chile powder, cumin and salt. Continue cooking approx. 5-10 minutes. Once fully cooked, take off burner and set aside.
Meantime, make dough by mixing together the dry ingredients: masa harina, baking powder and salt. Add in melted fat and mix until crumbly. Add chicken broth a little at a time until fully absorbed into dough. If it's too dry, add more chicken broth. It should be spreadable.
Grease a 9x13 baking dish with butter or non-stick cooking spray, then add meat mixture and spread evenly across the bottom of baking dish. Sprinkle shredded cheese on top. Spoon dough on top and carefully spread across the top of dish. (This will take a little time. If dough is not spreading, wetting your spatula with water may help.) Sprinkle additional cheese on top and bake at 350º for 30 minutes until golden brown.

Hello beautiful people! THIS WAS HARD! Haha You will see my struggles! I don’t know why it was such a mess because I’ve made this before with no problems. I was literally confused. I still am as I rewatch it and edit. Haha. The cookbook it comes from even says these are foolproof recipes. I just I’m worse than a fool. You be the judge! Tamale Pie is one of my go-to dishes when I'm in a rush. The savory filling contrasts nicely with the semi-sweet buttermilk cornbread crust. For the filling:
2 tablespoons vegetable oil
1 medium yellow onion, minced
1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon ground cayenne red pepper
1 teaspoon garlic powder
1 pound lean ground beef (or use ground turkey breast)
1 15.5 ounce can black beans, drained and rinsed
1 14.5 can diced tomatoes, well drained
1 cup (4 ounces) finely shredded sharp Cheddar cheese
2 tablespoons coarsely chopped cilantro
For the Buttermilk Cornbread Crust
3/4 cup plain flour
3/4 cup yellow cornmeal
3 tablespoons granulated sugar
3/4 teaspoon baking soda
3/4 teaspoon baking powder
Pinch of salt
3/4 cup buttermilk
1 large egg
