How To make Woodruff Special
4 Slices bacon
Cabbage leaves (1/4 head) 1 md Onion, chopped
2 c Rice, cooked
1 cn Sauerkraut (large can, well
Drained) 1 qt Spaghetti sauce
1 lb Chopped beef
1/2 ts Oregano
Garlic salt to taste Salt and pepper to taste DIRECTIONS Fry the bacon fairly crisp and reserve it. Use the bacon fat to grease a pan or casserole (a 10" x 12" x 2" pan is just about right for this recipe). Tear cabbage leaves as necessary to line the bottom of the pan, about 2-3 leaves thick. Break up the chopped beef and crumble on top of the cabbage leaves. Crumble the bacon pieces on top of the beef. Add the chopped onion, and then add salt, pepper, garlic salt and oregano. Cover this with the cooked rice and then the sauerkraut. Cover with another layer of cabbage leaves, about 2-3 leaves thick. Finally, pour the spaghetti sauce on top, distributing it evenly. Bake, covered at 325 degrees for 3-4 hours.

How to make woodruff syrup
This week is another traditional spring recipe. If you don't have woodruff in your garden and your local farmer's market doesn't have it, it grows wild in forests in moderate climates.
Please remember to forage sustainably. Check local laws and endangered species lists, never take more than a small fraction of what you find and most important of all: Make double and triple sure you know what you're taking is edible! Should go without saying, but take care of yourself.

With the typical flavors of woodruff you can make great syrups, brew tea, make jello or just transform sauce hollandaise like in this video. Perfect for this asparagus dish. Bon appetit!????
Ingredients:
1 bunch asparagus
1 bunch woodruff
About 200g butter
1 sweet potato
3-4 egg yolks
1 lemon (zest and juice)
1 shallot
3 Amazon chilies
salt
pepper
1 tsp sugar
Cook the asparagus tips for 5 to 8 min in the broth and then sautè with butter. Season with salt and pepper.
Cut the remaining asparagus into diagonal slices similar to the sweet potato and prepare as desired, season with salt and pepper.
For the sauce: in a bowl, whisk the egg yolks, lemon juice (and zest), sugar, salt and asparagus stock vigorously over 60-70°C water bath. I use the flavored asparagus stock instead of white wine for the hollandaise (all a matter of taste of course)????.
Simply prepare this with the asparagus sections, shallots, a piece of butter, salt and the woodruff and then pour through a sieve into the bowl (only as much as your sauce can absorb liquid).
