How To make Angels On Horseback
1 pt Large fresh oysters
12 sl Bacon, cut in half
1/2 ts Salt
1/8 ts Black pepper
1/8 ts Paprika
2 tb Fresh parsley, chopped
Drain oysters. Lay an oyster across 1/2 slice bacon. Sprinkle each oyster with seasonings and parsley. Roll entire strip of bacon around oyster and fasten with toothpicks. Place oyster on a rack in a shallow baking dish. Bake in 450 degree oven for 10 minutes, or until bacon is crisp. Remove toothpicks and serve. Video Cooking Demonstration and Recipe
These tasty little treats are perfect for entertaining and barbeques. The combination of salty bacon and sweet prunes truly compliment each other and they are a good bite sized treat.
Handy Hints:
Don't forget to soak your toothpicks in water for 30 minutes so they don't stick to the food and don't burn on the grill.
Always have a small shot glass or tray available for spent toothpicks. Place a toothpick in it to demonstrate its use. Nothing worse than guests eating the food and having no where to place the used toothpick.
Make sure there are enough napkins available to assist your guests.
The uncooked devils on horseback are suitable for freezing for cooking at a later time. Just make sure they are stored in a thick plastic bag or container to prevent puncture of the bag and possible freezer burn.
Devils on Horseback
INGREDIENTS:
120 GRAMS of pitted prunes
150 GRAMS of bacon cut into strips with the rind removed.
Toothpicks for securing the bacon around the prunes.
METHOD:
Lay the bacon strips flat and place a pitted prune at one end. Roll the bacon up around the prune and secure with a toothpick. Repeat this step until all the prunes and bacon have been used.
Turn a barbeque grill to medium heat and place the devils on horseback on the grill, turning often to brown on all sides. it should take no more than 5-7 minutes until they are brown on the outside and warm and plump in the middle.
Serve immediately with any dipping sauce of your choice or on their own.
This incredibly simple starter, fingerfood, is delicious, perfect bite sized and they look good too. With only the 2 ingredients they are economical and easy to prepare.
