How To make Sweet Raisin Bread
4 pk Yeast
1 c Lukewarm water
1 t Sugar
7 c Flour
1 1/2 c Raisins
4 T Olive oil
6 lg Eggs, room temperature
1 1/2 c Sugar
1 oz Anise flavoring
1 Lemon rind, grated
1 Orange rind, grated
ds Salt
In a large bowl, dissolve yeast and sugar in lukewarm water. When yeast has foamed, add the eggs and sugar that have been beaten together. Add anise, grated rinds, and salt. In a large pot, mix flour and raisins. Add yeast mixture to flour, mixing and bledning to form a dough. Rub oil over dough, cover and set out of draft to rise. In about 2 hours, punch dough down and let rise again. (Oil your hands before handling dough so it doesn't stick.) On second rise, divide dough into four pieces. Shape into loaves and place into 4 oiled bread loaf pans. Let rise to double in bulk. bake at 350 degrees for 10 minutes. Loosely cover pans with foil, reduce heat to 300 degrees and bake 20 minutes longer.

5 tsp active dry yeast
1/3 cup warm milk (40-46C)
1/2 tsp sugar
2/3cup milk
3 large eggs
1/2cup sugar
4 -1/2 cup (630g)all-purpose flour ( you might need more or less depends where you live )
1 1/2 tsp salt
2tsp cinnamon
1/2 cup unsalted butter at room temperature
1 1/2 cup raisins ( soak the raisins in hot tap water for 30 minutes then drain out liquid)
Makes two loaves
4.5x8.5 in/ 11.5x21.5 cm
Bake at 350F convection bake for 30-35 minutes

Dried milk powder 2 tbsp
Raisins ½ cup
Egg (beaten) 1 large
Softened butter 3 tbsp
Bake in a preheated oven at 180C/350F/Gas mark 4 for 20-25 minutes. Enjoy!

INGREDIENTs AND METHOD
Lukewarm Milk (3/4 cup or 180 ml)
Sugar (3 tbsp or 38 g)
Instant dried active Yeast (1 tbsp or 7 g)
Mix well
Leave it for 5 minutes
Melted Butter (3 tbsp or 40 g)
Beaten Egg (1 large - Leave 1 tbsp to use later)
Combine well
Plain Flour (2 1/2 cup or 300g add in batches)
Salt (1/2 tsp)
Mix well
Tip the dough over floured surface
Knead the dough (at least for 5 minutes)
Place the dough into a greased bowl
Cover
Leave it to prove until double in size (approx. 1 hour)
Knead the dough for 1-2 minutes
Divide the dough into 8 equal parts
Roll out each dough ball into a rectangle shape
Apply some butter
(for all rolls I have used ~2-3 tbsp or 30-35 g butter)
Sprinkle Raisins
(for all rolls I have used 1/4 cup or 50-60 g raisins)
Sprinkle dried Cranberries
(for all rolls I have used 1/4 cup or 50-60 g dried Cranberries)
Roll the dough
Cut the roll lengthwise from the centre
Leave one end intact
Shape/fold the bread rolls
Place the shaped bread roll in a lined and greased baking dish
Shape the remaining bread rolls in the same way
Cover
Leave them to prove (at least for 1/2 an hour)
Brush with 1 tbsp (leftover) egg
Bake in a preheated oven at 180C/350F/Gas mark 4 for 25-28 minutes
Brush with some butter while hot
Soft and Fluffy Raisin Cranberry Bread Rolls are ready to serve

All purpose flour or maida - 380g
Butter (unsalted) - 42g (room temperature)
For filling:
Cream cheese - 150g
Sugar - 50g
Raisin - 75g
Egg yolk - 1
Milk - 15ml
Cup - 240ml
Milk - ¾cup (room temperature)
Sugar - 3tbsp
Instant yeast - 2tsp
Salt - ½tsp
Egg - 1 (room temperature)
All purpose flour or maida - 3cup
Butter (unsalted) - 3tbsp (room temperature)
For filling:
Cream cheese - ⅔cup
Sugar - ¼cup
Raisin - ½cup
Egg yolk - 1
Milk - 1tbsp
Bake in preheated oven (180°C) for 20 - 25 mins
