How To make Ableskiver (Pancake Balls)
Ingredients

cups
flour, sifted
2
tablespoons
sugar
1
teaspoon
baking soda
1
teaspoon
cardamom
3/4
teaspoon
salt

sour cream
2/3
cup
milk
3
large
egg yolks, beaten
2
tablespoons
butter, melted
Directions:
Set an ableskiver pan over low heat.
Sift together and set aside:
Make a well in center of dry ingredients. Add liquid mixture all at one time, stirring until well blended.
Beat until rounded peaks are formed: 3 egg whites. Gently spread batter over egg whites and fold together.
Test ableskiver pan by dropping on it a few drops of cold water; if drops dance around in small beads, temperature is right. Grease well with butter (About 1/2 tsp. per well).
Pour batter into wells, filling about one half full. With a fork turn ableskivers frequently to brown evenly. Do not pierce.
Ableskivers are done when a wooden pick inserted in center comes out clean. Serve immediately sprinkled with powdered sugar. If desired, accompany with a tart jam.
About 4 dozen balls.
Apple Pancake Balls (Ableskiver II)
Follow above recipe. Rinse, pare and dice 2 medium-sized apples. Sprinkle about 1 teaspoon of the diced apples over batter in each well.

Æbleskiver is a traditional Danish snack which I liked the most when I was in Denmark. Most often it is served during Christmas Season. It is puffy, light and has a unique taste. Usually it is eaten with icing sugar and Strawberry jam.
We can prepare a batch of Æbleskiver and can freeze in zip lock covers. Whenever kids are asking for some snack, you can microwave it and serve with icing sugar. It is really delicious. Ingredients:
Apple -1 Nos
All purpose flour- 250g
Eggs -3
Zest of 1 Lemon
Cream-100ml (1dl)
Leban (butter milk)-300ml (3 dl)
Baking powder-1/2 Tsp
Baking Soda-1/2 Tsp
Butter -50g (melted)
Sugar -150g
Vanilla essence- 2 Tsp

How To Make Ebelskiver ~ The Danish Delight!
Dr. Lou cooks Ebelskiver, a danish pancake in the shape of a donut hole, that can be filled with everything from jam to Nutella, or both. With a special Ebelskiver pan, making the perfectly round treat is pretty easy.
There's another reason why Ebelskiver are cool. Most Americans don't know what they are. For this reason, among others, people are intrigued by the little pancakes! You'll serve up a hit at any party, just like Dr. Lou did this past Saturday.
Dr. Lou doesn't have much of a sweet tooth, so recipes like this are unusual for him. This one, because of the cardamom, is different. It's not overly sweet and it's taste is pleasantly unique. With the jam, it's simply divine.
Ingredient List:
1 1/4 cup Flour
1 cup Milk
2 1/4 tsp Baking Powder
1 Egg
3 Tbl Butter
2 Tbl Sugar
Powdered sugar for sifting
Strawberry, lingonberry or other jam (optional)
1/2 tsp Salt
1/2 tsp Cardamom powder
