(14 oz.) diced 1/2 C. Cheddar cheese -- grated 1/4 C. bread crumbs 1/2 C. yogurt 2 Tsp. chopped parsley 1 Dash Worcestershire salt and pepper to taste Saute onion and garlic in a few drops of oil until soft. Beat eggs well in large bowl. Add all other ingredients. Pour into well greased quiche dish. Bake 1/2 hour at 325 degrees until knife comes out clean. Cool slightly and serve.

I make this easy vegan quiche all the time since I've perfected it! All ingredients are found in the majority of big supermarkets, but the key ingredient is the Black Salt, which has a Sulphur (egg) flavour; I bought mine from an Indian Supermarket. This is just the basic recipe - I've also added different types of veg such as broccoli, Mushrooms, Tomatoes, etc! You could also just buy a pre-made shortcrust for the base, but this Rustic crust is very wholesome and gives a more interesting twist/taste/texture!
