Copycat Bailey's Irish Cream - how to make it at home
This replaces an earlier version, made a little better with better ingredients. This is a smooth, slightly sweet drink with a delicate flavor of whiskey. Note: I live near Costco where I can buy a 1.75L bottle of Kirkland Signature brand Irish Cream Liqueur (supposedly made by the Bailey's company) for about $15. It's good, but when I want something special to share with friends who come to visit around the holidays, I make my own.

How To Make Baileys Truffles
Adding a little booze to our desserts is kind of our thing and we aren't sure how we didn't do this sooner. Perfect for your next holiday party to bring along with your Moscato Truffles.
INGREDIENTS
2 c. chocolate chips
3 tbsp. heavy cream
1/4 c. Baileys
Pinch kosher salt
1 1/2 c. white chocolate chips
1 tbsp. coconut oil
Cinnamon-sugar, for sprinkling
DIRECTIONS
Set up a double boiler by placing a medium heatproof bowl over a small pot of simmering water. Add chocolate chips and heavy cream and stir until melted.
Turn off heat and stir in Baileys and salt. Refrigerate until chocolate mixture is form enough to roll into balls, about 1 hour.
In a medium heatproof bowl, microwave white chocolate and coconut oil together, in 30-second intervals until melted.
Using a small cookie scoop, roll chocolate into 1-inch balls then place on a parchment-lined baking sheet. Using a fork, dip each truffle into white chocolate, turning to coat. Place back on baking sheet and sprinkle with cinnamon-sugar. Refrigerate until chocolate is hardened, 30 minutes.
