Simple and Easy Meatloaf Recipe
Nothing says comfort food better than a good old fashioned meatloaf recipe. This meatloaf is not a complicated dish. In fact, my recipe has the most basic, simple ingredients, yet still gets 5 stars all the way!
Ingredients:
2 lbs. lean ground beef
1 cup Italian breadcrumbs
2 eggs
1/2 cup onion, diced
2 tsp garlic powder
2 tsp chopped parsley
1 tsp salt
1 tsp pepper
1/2 cup bbq sauce
For the Topping:
1/3 cup ketchup
2 tbsp brown sugar
1 tsp yellow mustard
*You'll increase the oven temperature to 400 degrees F when topped with the glaze.

I've taken the classic Meatloaf & Smashed Potatoes to another level with this Bacon & Cheddar Overload! The meatloaf was stuffed with onions, red bell pepper, jalapenos, garlic, and lots of high temp cheddar cheese, and covered with a blanket of bacon, and then smoked low & slow for a very delicious result! The meat was juicy, and bursting with great flavors! As a side, I made a Loaded Smashed Potato casserole that will ROCK your world! Yep, this was my Mothers Day meal, and my wife, and her daughter and grand girls loved it! Enjoy!

Smoked Bar-B-Q Meat Loaf!
In a very large bowl put:
2 lbs. of 80/20 ground beef
1 lb. ground pork
1/2 cup finely chopped green bell pepper
1/2 cup finely chopped red bell pepper
1/4 cup finely chopped celery
1/2 cup finely chopped (mix of green and sweet onions)
1 heaping tbsp. minced garlic
1/2 cup finely chopped mushrooms
1 heaping tbsp. bar-b-q seasoning
1 tsp. diced jalapeno peppers (optional)
1/2 tsp. salt
1 tsp. black pepper
1/2 cup Mexican blend shredded cheese
1 cup bread crumbs (your choice what kind)
2 eggs beaten
1/2 cup half and half
Mix just until evenly incorporated
Divide into 2 loafs and put them in the frig for 2 hours.
Put them on a rack and cook in your smoker at 275 to 300
until internal temperature hits 150 degrees.
Cover the top with bar-b-q sauce and cook until internal temp
is 160 degrees.
Let rest for 20 to 30 minutes. Slice thick and enjoy!

1-2 lbs meat of choice .. you can use ground chicken. beef. or turkey
* used 3 lbs which can serve 6-7 people .. keep in mind meatloaf is great for leftovers such as sandwiches etc.. this also freeze well, just wrap in seran wrap and freeze*
3 slices bread
1 cup milk
eggs * 1 egg per lb of meat used *
desire amount chopped bell pepper and onion ( I used about 1/2 each*)
3 tbs wortchesire sauce
3 tbs onion and garlic powder
1 tbs salt
2 tbs beef bouillon ( or 2 packs onion soup mix )
1/2 cup bbq sauce ( or desire amount )
To make the glaze *This is to taste so please adjust to your liking *
1 cup ketchup
1/3 cup brown sugar
1/2 cup bbq sauce
3 tbs wortceshire sauce
