Watch as we forage one of our best hauls EVER of the delicious Chicken of the Woods mushroom!! Laetiporus Sulphureus is known for its meaty texture and beautiful vibrant shelf-like fruiting bodies. Here we spot a major fruiting hidden up under a dead hardwood in the mountains of North Carolina.
This is one of the easiest mushrooms to spot if you’re lucky enough to be in the right place at the right time to catch a glimpse of the orange and yellow colors.
Additionally it’s one of the “Fool Proof Four” which are edible mushrooms that lack any close lookalike and therefore are great for anyone who’s just getting into foraging or mycology.
As always though, be sure to have a 100% positive ID before foraging any wild mushrooms for the table.

Black Trumpet Mushroom Risotto
Ingredients
2 cups Arborio Rice
1 tablespoon Olive oil
1/4 cup shallot, diced
1 cup Black Trumpet mushrooms, roughly chopped
1 clove garlic clove, minced
6 cups mushroom stock or vegetable stock
Preparation

Heat the stock in a large pot and keep at a simmer.

Heat the oil in a large non-stick pan over medium high heat. Add the shallots, garlic, and mushrooms. Remove the sauteed vegetables and keep warm.

Add the Arborio Rice to the pan and toast the rice over medium high heat. This should take about 2 - 3 minutes.

Add the vegetables back into the pan and stir to combine.

Add 1/2 cup of the stock into the pan and stir until it's absorbed. Repeat this process until the risotto has your desired consistency. Salt and pepper to taste and sprinkle with fresh chopped parsley.

Сушеные боровики имеют самый сильный аромат по сравнению с заготовленными другими способами. А сам процесс достаточно прост. Сушить их можно с помощью духовки, специальной сушилки, солнечных лучей или костра.
Промывать грибы перед сушкой не нужно, поскольку, напитавшись водой, они будут долго сохнуть. Обычно для сушки большие грибы нарезают крупными дольками, а маленькие оставляют целыми. Длительность высыхания зависит от выбранного способа.
Хранить сушеные белые грибы рекомендуется в тканевых мешочках или стеклянных банках. Зимой перед использованием нужно их размочить в воде, а потом уже добавлять в блюда, например, пиццу, борщ, гречку и др

It is recommended to store dried porcini mushrooms in cloth bags or glass jars. In winter, before using them, you need to soak them in water, and then add them to dishes, for example, pizza, borsch, buckwheat, etc.
