Breakfast Casserole
Everything you love about breakfast in one easy and delicious casserole. Perfect for Thanksgiving and Christmas morning or whenever you have company over. Pop it in the oven when you get up and you are good to go.

???????????? BREAKFAST CASSEROLE
1 lb bulk sage pork sausage
1 cup green bell pepper, chopped
1 cup red bell pepper, chopped
10 eggs
2 cups whole milk
¼ tsp ground black pepper
½ tsp garlic powder
½ tsp salt
3 cups frozen country style hash browns
1 cup French’s crispy fried onions
8 oz cheddar cheese
hot sauce, optional
Bake at 350 F or 177 C uncovered for 40 minutes. Then cover with foil and bake 10 more minutes.
*Be sure to let the casserole sit out at least 20-30 minutes before baking because the sudden changes in temperature may cause the dish to shatter or break.

Simple Egg and Sausage Casserole Recipe
One of my favorite breakfast casseroles. Egg Casserole with bread and sausage and cheese. Recipe below.

Ingredients:
1 lb ground breakfast sausage (browned)
6 Slices of bread (cubed)
2 Cups of Milk
6 Eggs
2 cups of shredded cheese (cheddar)
Steps:
1 Brown the breakfast sausage then set aside
2 cube or break 6 slices of bread
3 In a mixing bowl, add 6 eggs, milk, breakfast sausage, and cheese - mix thoroughly
4 Add bread and let soak for 30 minutes
5 Pour in a 13 x 9 casserole dish or baking pan
6 Bake at 350 uncovered for 40-45 minutes.

Breakfast or dinner, which do you prefer? I love breakfast for dinner. This casserole doesn't disappoint. Serve with a side salad, grilled asparagus, or your favorite side and you have a delicious dinner. Don't forget the salsa! Ingredients:
2 cups hash brown potatoes O'Brien (if you can't find these potatoes, add a few diced onions and red or green bell peppers)
6 x-large eggs
1 1/4 cups milk, I used half evaporated and half heavy cream
1/2 lb breakfast sausage
2 cups cheese, shredded sharp and/or mild
2 Tbsp mascarpone cheese, can substitute cream cheese
1/2 tsp paprika
1/-1/4 tsp ground red pepper
salt & pepper to taste
Directions:
Preheat oven to 350 degrees.
Spray 8X8 baking dish with non-stick spray.
Add sausage to a skillet, breaking up and cooking until done or almost done. Remember, it will continue cooking in the oven. Meanwhile,
in a separate bowl, beat eggs with milk. I used a combination of evaporated milk and heavy whipping cream. You can use whole milk or half & half. Your choice. Whip in the mascarpone cheese. Stir in cheeses, and seasonings. When sausage is cooked, add to egg mixture, stirring to combine. Add potatoes to bottom of the baking dish, spreading out evenly. Pour mixture into the sprayed baking dish over the potatoes. Bake 45-55 minutes or until a toothpick inserted in the middle comes out clean.
If top of casserole starts getting too brown, cover with aluminum foil and continue to bake.

Egg and Bread Casserole
Preheat the oven at 350 degrees F/180 degrees C.
Crack the eggs and put them into a medium bowl.
Add 1 cup of milk and whisk.
Sprinkle it with cinnamon.
Cut the bread into cubes.
Put the bread cubes into the eggs and milk composition and mix using a silicone spatula.
Place the bread cubes in a ceramic baking dish.
Top it with bacon slices, ½ cup of shredded mozzarella, rocket salad, red bell pepper slices, and the rest of mozzarella.
Bake for 25 minutes.
