3 Green onions; chopped
1 c Lowfat cottage cheese;
1 ts Dried dill;
1/4 c Parmesan cheese; Grated
1/2 c Lowfat milk;
Combine all ingredients in a mixing bowl. Pour into a lightly oiled casserole. Bake at 350 F for 15 to 20 minutes. New Recipe! Cheesy Mexican Rice Casserole - WW 5 Points Plus Huge Slice!
Cheesy Mexican Casserole! Delicious!

Ingredients:
1/3 Cup Bisquick HeartSmart
1 Pound of Mixed Pepper Strips (frozen)
2 Cans (Drained) Diced Tomatoes
1 Packet of Taco Seasoning
1 Can Whole Kernel Sweet Corn
1 Can Campbell's Cheddar Cheese Soup
2 Cups Brown Rice
3/4 Cup Reduced Fat Cheese
1/4 Cup Water
1 Can Black beans 15.5 oz Can (Drained and rinsed)
Take Bisquick and Cheddar Cheese Soup & 1/4 Cup water and mix well until creamy
In a 9X13 Sprayed with Pam pour the Soup mixture on the bottom (evenly distributed)
Pour all ingredients except for the cheese into a large pot and simmer for 5 to 7 minutes
Preheat oven to 350
Pour Entire rice mixture on top of cheese mixture
Cover with aluminum foil and put in oven
Bake for 45 minutes and remove from oven
sprinkle 3/4 cup of Cheese
Stick casserole back into the oven for 15 more minutes
Remove from oven
Cut into 8 Slices - 5 Weight Watchers Points Plus per huge Slice!

Pair this recipe up with green peas and a roll or a salad, roll and glass of tea for some home cooked deliciousness. It's got everything you love and everything that's good for you: broccoli, chicken, rice and cheese. Oh, what cheesy goodness. This is a baked casserole deluxe.
Broccoli and Cheese Casserole
2 lb. Chicken Breast (or your preference)
1 ½ lb. (24 oz.) Chopped Broccoli
1 Can Cheddar Cheese Soup
1 Can Cream o’ Mushroom Soup
1 Can Cream o’ Chicken Soup
½ Cups Celery
½ Cups Chopped Spring Onions
2 tbsp. Butter (optional)
4 Cups Cooked Rice (2 cups uncooked)
Garlic, Lemon Pepper, Adobo Seasoning, Salt (to taste)
Paprika and Shredded Cheddar (for Topping)
A Little Oil for Frying Chicken
Bake in a pre-heated 350 degree oven for about 25 minutes.

OLD SCHOOL BROCCOLI ????,RICE AND CHEESE CASSEROLE/OLD SCHOOL CRANBERRY SAUCE/HAPPY THANKSGIVING ????????
OLD SCHOOL CRANBERRY SAUCE:
I actually I didn't grow up on homemade cranberry sauce
We used the one in the can with the ridges showing at the table
But I have a recipe that's good and flows over your turkey and dressing instead of just laying on top
It's simple and easy as all my recipes are
Recipe
12 oz. fresh or frozen cranberries
1 cup brown sugar
1/2 cup granulated sugar
1 teaspoon nutmeg
1 teaspoon cinnamon
2 cup orange juice
2 tablespoons cornstarch ( slurry)
Add all ingredients together in sauce pot
Bring to boil (about 30 minutes or until berries start to burst )
Thicken with cornstarch slurry ( about 2 tablespoons)
And cook an additional 5 minutes
Let cool and enjoy!!!
BROCCOLI,RICE AND CHEESE CASSEROLE RECIPE:
2 heads of broccoli florets (small) cooked in salted water
2 cups cooked long grain rice(seasoned)
4 cups old school cheese sauce(recipe below)
4 oz. cold butter(sliced)
1 cup panko bread crumbs
1 cup grated parmesan cheese
Combine broccoli, rice and cheese sauce in large bowl mix well
Pour into greased baking casserole dish
Top with parmesan cheese and bread crumbs
Place cold butter(sliced) on top of cheese and bread crumbs
Cook for 30 minutes on 350 degrees or until golden brown
FOR CHEESE SAUCE:
Add 1 quart of milk to pot and bring to a boil
Season with salt and white pepper
add 1 cup roux9flour and melted butter) add to hot milk mixture and cook until thickened
Add 4 oz cream cheese
4 oz pepper jack cheese
4 oz velvetta cheese
4 oz jack cheese
1 cup mild cheddar cheese
Add to thickened milk mixture and incorporate completely

I'm aware that this is not authentic Mexican food friends. This is my original recipe thank you for respecting my creativity and taste buds.
????If you love using poblanos, You'll love this chimichanga casserole recipe
Bake temp: 380 Degrees (F)
Bake time: 25 minutes
Broil on HIGH the last 3 minutes
Ingredients
1.5 pounds pre-cooked shredded chicken (I used 4 thighs)
5-7 poblano peppers + one poblano for topping
6 Yellow corn tortillas
2 1/2 cooked rice (I used Calrose)
2 1/2 cups heavy cream
3/4 cup water (to blend roasted chilis)
2 cups freshly shredded mozzarella (or Oaxaca- manchego)
1/2 cup cotija cheese or parmesan
1/2 finely chopped onion (use a grater : )
3 finely chopped garlic cloves
1/2 bunch of cilantro (50 stems :)
2 Tbs butter
1 1/2 Tbsp chicken bouillon (adjust to taste)
1/2 tsp black pepper
Tip
-The layering used in this recipe was done 2x (including the tortillas 6 total)
-If you have a plethora of poblanos you can always add more to this recipe : )
-Taste best with yellow corn tortillas
-If you have fresh chicken broth use 3/4 to blend with poblanos for best flavor
-Save 2 cups of creamy poblano sauce as mentioned in the video
-This recipe is great for later use and frozen
*If frozen Thaw out fully
*Cover with a foil
*Bake at 380 Degrees for 35 minutes
*remove foil and continue baking for an additional 10 to 15 minutes
