Chuck Wagon Stew
1/4 cup flour
1 teaspoon salt
1/2 teaspoon pepper
1-2 lb. chunk of beef cut into bite-sized pieces or stew meat
1 onion; chopped
1 clove garlic or use minced garlic
16 oz. can diced tomatoes
1 teaspoon salt
1/2 teaspoon basil
1/4 teaspoon celery salt
1/4 teaspoon pepper
Pinch of cayenne pepper; or more if desired
1 Tablespoon Worcestershire sauce
5 3/4 oz. can of mushroom steak sauce (this is not available in my area. I also couldn't find it on Amazon. I used a pkg/envelope of mushroom gravy instead)
10 oz. pkg frozen mixed vegetables
2 Tablespoons butter
In a small bowl, combine flour, salt and pepper. Coat the meat in the flour mixture. Set the remaining flour aside. You will use that later.
In a hot Dutch oven, add 2 tablespoons of oil. Brown the meat.
Add onion and garlic and cook while you do the next step.
Combine the tomatoes with the remaining flour. Add to the meat/onions/garlic in Dutch oven.
Add the remaining ingredients except the potatoes and frozen vegetables.
Bring to a boil. Add lid. Reduce heat and simmer for 1 hour; stirring occasionally.
Stir in potatoes and frozen vegetables and simmer 1 hour longer or until meat is tender and potatoes are done.
