You could say there are two types of people in this world – people who know and love Runza and people who haven’t yet had one. In case you’re one of the latter, I’ll give you a little explanation – a Runza is a bread pocket that’s stuffed with beef, cabbage or sauerkraut, and onions. Think savory, filling, beefy hot pocket, but even better. The sandwich has old German-Russian roots but is most popular in Nebraska where you can find multiple restaurant chains that serve it but all you really need to know is that it’s good and our Runza Casserole pays homage to it in a comforting baked dish that’s family-friendly and super simple to make.

Soft and buttery yeast rolls stuffed with savory cabbage and beef - YUM! Grandma's cabbage burgers are similar to Runzas, Bierocks, Bushkas or Kraut Kuchen - no matter what you call these, they are GOOD! And they make a ton...literally 5 dozen. Don't worry, they freeze perfectly!

Runza! A Regional Favorite!
John tackles a Nebraska classic! Runzas are a delicious combo of beef, onion, cabbage and spices. It’s a bit of work, but worth the tasty results, if you don’t have time for a road trip.

I prepare a recipe sent to me by a subscriber, abbyloowho, to give a try. You must like cabbage to enjoy this meal. I liked it, mom wasn't too sure she liked it. Give it a try!
2 pounds lean ground beef
2 bags of coleslaw mix (cabbage mix)
2 cans of crescent roll dough (preferably the one that is not already cut but if you can't find that its okay just seal up the seams)
Salt and Lots of Pepper
Preheat the oven to 350 and lightly grease a 9 by 13 pan.
In a large pot place the coleslaw mix in with salt and pepper and cook down for about 20 minutes or until you like how soft it is
Brown the ground beef with salt and pepper
Mix the ground beef and slaw mixture together
Place one can of crescent roll dough into the bottom of the pan
Place in the slaw mixture
Place the second can of crescent roll dough on top and cover with aluminum foil.
Bake for about 30 minutes and the last five remove the foil to allow the top to brown.
Serve nice and hot! You can either use a spoon or cut it and use a spatula.
Abbyloowho's notes:
My family loves using the slaw mix because it has two kinds of cabbage and a little carrot in it(add extra flavor which would be good since you have issues with salt) but if you cant find it no worries just use about 4 cups of shredded cabbage of your choosing!
I am sure you can easily cut this recipe in half and use an 8 by 8 inch pan and reduce the cooking time just a bit!
You can also add cheese if you wish, any kind, about 2 cups worth for a whole recipe!

Tammy and I have been friends for many years and met here on YouTube! Since then we have met up in real life many times. You will LOVE her tutorials and learn how to decorate cupcakes better than most bakeries do. She lives in Canada, but I really wish she lived next door.
