How To make Indian Pot Roast
1 4 lb. pot roast
2 Cloves garlic
Flour 12 Whole peppercorns
1 Bay leaf
1/2 c Good rum, or dry red wine
4 tb Butter
Salt 1 lg Onion, sliced
12 Whole allspice
1 tb Grated horseradish
1/2 c Water
1 Recipe your dumplings
Small whole carrots OR>>> Large carrots, quartered
Use this recipe for either regular meat or venison. Mash garlic and saute in butter. Salt meat and flour. Brown well on all sides in butter. Lay meat on bed of this sliced onion in lge. Dutch oven. Add the butter, spices and seasonings. Pour rum or wine over meat. A good pot roast will supply most of its own juices, but pour the water over to make an ample supply of gravy. Cover tightly and simmer 3-4 hrs, either in oven or on the stove top. If carrots are wanted, add during last 1/2 hr. of cooking. Add dumplings last 12 minutes. When roast is done, remove to a hot round platter and surround with dumplings and carrots. Stir gravy until smooth. Pour over roast. If fresh dill is available, cut it over dish with lavish hand. Kerala Style Beef Roast | Authentic Beef Roast Recipe | Nadan Beef Varattiyathu | Beef Ularthiyathu
Kerala Beef Roast is a traditional styled ethnic dry curry dish very popular in Kerala. Keralites favorite Nadan Beef Varattiyathu! Also called Beef Ularthiyathu. If anyone asks me what would be best with beef then I would tell them – “Beef Roast”. This mouth drooling Malabar Style Beef Roast is unique with pressure cooked beef roasted dry with coconut flakes and other spicy seasonings. The roasting process takes about 15 to 20 minutes. But I would say the more you roast the more tastier beef roast you get. This Beef Roast dish is so simple to make and goes really well with a side of thoran (vegetable dish) and some buttermilk curry (yellow moru curry) to go over matta rice.
This dish also goes perfect with appam, tapioca, puttu, pathiri etc.

Ingredients :
750 gms Beef (washed & cut into small cubes)
For the Masala Paste :
25 to 30 (60 gms) whole Shallots
1 medium sized (75 gms) Onion - roughly chopped
2 inch Ginger (20 gms)roughly chopped
15 cloves (25 gms) Garlic medium sized
2 tbsp Coriander Powder
1 tbsp Kashmiri Red Chilli Powder
1 tbsp Garam Masala Powder
1 tsp Turmeric Powder
½ tsp Pepper Powder
1 tsp Fennel Seeds (saunf)
½ tsp Cumin Seeds
100 ml Water
Other ingredients :
5 to 6 tbsp Coconut Oil (use as per your diet restrictions)
3 nos Green Chillies (slit in the middle)
2 to 3 sprigs Curry Leaves
½ Salt (or as per taste)
200 ml Water
For roasting :
5 to 6 tbsp Coconut Oil (use as per diet restrictions)
½ tsp Mustard Seeds
2 sprigs of Curry Leaves

POT ROAST | INDIAN style ROAST BEEF | Kravings
POT ROAST - My loving aunt Celie Coutinho made the best Pot Roast. Although this is called Roast Beef in India, it's prepared in a pressure cooker and it cooked till tender with a lot of spices.This recipe was handwritten by my aunt and given to me only months before she passed away
suddenly.
Here are the ingredients and steps to make this recipe!
Beef Chunk 1 kg, 2.2 lbs
Juice of 1.5 limes
1 tsp each Chilli powder, Turmeric & ground Cumin powder
30 crushed black Peppercorns
½ cup Oil
1 cup sliced red Onions
6 Kashmiri Chillies
¼ cup(4 tbsps) each Ginger & Garlic paste
3- 4 tbsps Vinegar
2 inch stick Cinnamon
20 – 30 cloves
2 potatoes sliced and fried
¼ cup chopped Coriander
Cut the beef into 4 pieces and marinate with the lime juice, salt, cumin, turmeric & chilli powder and the peppercorns
Add the Ginger & Garlic paste and the Vinegar
Add the cinnamon and pierce the meat with the cloves
Marinate overnight
Heat oil and saute the onions
Break the Kashmiri chillies into smaller pieces and add to the onions
Either move the onions to one side or remove them and brown the beef chunks
Add 1 cup of water and pressure cook for 3 whistles
Remove the chunks and cool
Cook the gravy till it thickens up
Slice the beef and return it to the gravy, adding the precooked potatoes and extra pepper
Garnish with chopper coriander

Beef - 1 kg
Coriander powder (മല്ലിപ്പൊടി) - 1+2 Tablespoon
Chilli powder (മുളകുപൊടി) - ½ Tablespoon

Beef Steaks could not get any easier! I have served it here with a side of mashed potatoes and peas (this is for when we're in a mood for great indulgence), but we more commonly enjoy it as a gratifying accompaniment with Rice and Sorak :)

Ingredients for Beef Steak:
1 kg Beef Tenderloin (or steak cuts of choice)
15-20 cloves of Garlic, crushed or ground to paste
2 teaspoons of Black Peppercorns, crushed or powdered
1 teaspoon of Salt
4 Tablespoons of White Vinegar
4 Tablespoons of Oil (Regular Cooking Oil)
4 Tablespoons of Soy Sauce
For the Mashed Potatoes:
2 Potatoes, sliced and steamed (can be boiled)
Salt to taste
1 teaspoon Butter
Ground Black Pepper, as needed
1/4 cup of Milk (or Cream)

Beef Pot Roast—Christmas Special Anglo-Indian Recipe—Slow-Cooked Beef Chuck Roast
Beef pot roast is a classic dish that manages to be comforting and flamboyant at the same time. It is perfect for the Christmas dinner! As you can tell a braised slow-cooked recipe like this is flexible. You can use different condiments, different flavourings, herbs, spices, use stock, tomato puree, or wine instead of plain water for the braising liquid—just as long as you stick to the basic process it should be good. The pot roast recipe in this video is from Patricia Brown's 'Anglo Indian Food and Customs', although the technique has been modified in places based on Kenji Lopez-Alt's pot roast recipe in his book 'The Food Lab'.
Since the beef cooks for a long time in the braising liquid please don't add salt to the gravy until the end or else by the time everything is reduced down it may be too salty. We have trussed the roast, because it makes for a nicer presentation. You can easily skip this step if you want.
The leftovers of the roast are perfect for making jhalfrezi—another Anglo-Indian favourite.
