How To make Mange Tout & Carrots with Soy Sauce.
300 g 10 oz baby carrots
350 g 12 oz mange tout, trimmed.
30 ml 2 tbsp soy sauce.
Half clove garlic, crushed. 1 Cm half inch piece of fresh
Root ginger peeled and Chopped 25 g 1 oz sunflower seeds toasted
Remove the tops from the carrots, then scrub them. Bring a large steamer to the boil and steam the carrots for 5 minutes. Add the mange tout and steam for a further 2 minutes. Place the vegetables, soy sauce, garlic and ginger in a large pan and stir for one minute until thoroughly mixed. Shaoxing wine - Mirin or Dry Sherry or a little salt
Chicken broth - Shrimp broth or vegetable broth or Mix hot water with a little boullion or a chicken/shrimp seasoning packet from a ramen pack

Nikujaga (Japanese beef and potato stew)

Learn how to make Nikujaga with this easy recipe from Yutaka!
Nikujaga is a traditional Japanese dish with meat, potatoes and onions stewed in sweetened soy sauce.
Our presenter, Atsuko Ikeda, has her own cooking school in London: Atsuko's Kitchen.
Atsuko teaches beginners and advanced cooking courses with traditional and modern recipes from the Japanese cuisine.
Ingredients: serves 4
- 360g beef (thinly sliced if possible from the butcher or slice your own)
- 1 onion
- 500 g potatoes
- 2 carrots
- 10 mange tout (snow peas or snap peas)
- 200 g Yutaka shirataki noodles (yam potato jelly) pre-cooked in salted water for 3 mins.
- 1 tbsp sunflower oil
Seasonings:
- 300ml dashi or water
- 3 tbsp Yutaka cooking sake
- 2 tbsp brown sugar
- 3 tbsp Yutaka mirin
- 120ml Yutaka soy sauce (reduced salt)
Preparation:
1. Peel vegetables, cut potatoes in half, chop carrots roughly and
cut onion into eights. Cut mange tout in half.
2. Slice beef thinly as much as you can if it is not already sliced.
Method:
1. Heat the oil in a deep pan then fry the onions, carrots, and potatoes.
2. Add the beef and shirataki between the ingredients. Brown the beef
then add 300ml dashi stock and bring it to the boil.
3. While boiling, skim the scum off the surface of the water. (called aku -- it
creates a bitter taste and cloudy soup)
4. Add sake, brown sugar, and mirin. Put the lid on, turn down the heat,
then simmer for 15mins until potatoes cooked.
5. Add soy sauce, cook slowly on a low heat for 10mins then add mange tout.
6. Remove from the heat then leave to stand until you serve. If you can wait for a while, leave it to cool down.
The flavour will soak slowly into the ingredients. The stewed dish always tastes better the second day! Just heat it again before you serve.

Little Miss Meat Free - Sweet and Sour with Cashews
Nothing beats a Chinese takeaway; I urge you to try this recipe as it will take less time to prepare than ordering a takeaway! Serve with rice and as many vegetable spring rolls as you can eat.
Serves 2
Ingredients
For the sauce:
50g brown sugar
50g malt vinegar
150g tomato ketchup
1 small tin pineapple chunks, drained
1 tbsp soy sauce
For the stirfry:
1 tbsp vegetable oil
2 carrots, peeled and sliced
1 red pepper, sliced
2 spring onions, chopped
10 mange tout
6 babycorns
½ tin water chestnuts
2 handfuls cashew nuts
Method
Add all of the ingredients for the sweet and sour sauce into a pan, bring to the boil and simmer for 10 minutes, stirring occasionally.
Meanwhile, heat vegetable oil in a wok. Add the carrots, pepper, onions, mange tout and babycorns and stirfry for 6-8 minutes.
Add the water chestnuts and cashew nuts and pour over the sauce. Stir-fry for 1 further minute.
