Cajun Meatball Stew
Combine below ingredients for meatballs.
2lb ground beef
2tbs Worcestershire sauce
1tbs Mustard
1tbs Minced garlic
Tony Chachere‘s to taste
1tsp Roasted garlic powder
1tsp Onion powder
1/2tsp Turmeric
Coat the bottom of your pan with olive oil and brown your meatballs on all sides until golden,remove the meatballs, throw in a medium chopped bell pepper and onion and sauté for 7 to 8 minutes. Then we’re going to throw in some chopped golden potatoes and cook for another 10 minutes. Add in 32 ounces of chicken broth and a 1/2 cup of water. Add in 2tbs Tony Chachere’s brown gravy and roux. Season to taste with Tony Chachere’s creole seasoning. I also added in 1tsp of the following spices. Turmeric, garlic powder, onion powder & dried parsley. Cook on medium low heat for 10 minutes then add your meatballs back in. Cover and simmer on low for another 25-30 minutes are until potatoes are fork tender.

Meatball Stew
Ingredients
* Meatball mix
* 2.5 to 3 pounds of ground beef
* 3/4 cup of fine bread crumbs
* 1 Tbsp salt
* 1/2 tsp cayenne pepper
* 1/2 tsp white pepper
* 1/2 tsp black pepper
* 1/2 tsp paprika
* 1/2 tsp dried thyme
* 1/2 tsp dried parsley
* 1/2 tsp garlic powder
* 3 eggs
* 3/4 cup flour
* 3/4 cup butter
* 1 large onion chopped
* 1 bell pepper chopped
* 2 stalks of celery chopped
Directions
1. Add butter to a cast iron skillet, add flour and stir continuously over medium heat until dark reddish brown color. Remove from heat.
2. Add 3/4 of the chopped vegetables to the roux, mix and set aside (Save the remaining vegetables until later)
3. Add 2 quarts of water to a large pot, bring to a boil. Slowly stir in the roux and vegetables.
4. Combine the ingredients for the meatballs and mix thoroughly. Make about an 1.5 inch to 2 inch meatballs and add them to the stew
5. Cover and cook about 25 minutes at a simmer
6. Add the remaining vegetables to the stew, stir and cover and cook for an additional 30 minutes at a low simmer.
7. Server over rice.

My family's favorite meatball recipe is what I'm sharing today, simple yet delicious.
Easy Soft And Delicious Meatballs
40g leftover bread or fresh bread
Sauce
1/2 of a medium onion
400g tomato purée
1/2 tsp Black pepper
Salt
3 tbsp of olive oil
Mince Mixture
400g ground beef
1 tbsp parsley
1 tbsp Parmesan cheese
1 medium clove of minced garlic
1 tsp black pepper
Salt
1 whole egg
To Add To The sauce
1 cup of water
1/2 cube of beef or chicken stock
METHOD
-Soak the bread in water for 5 minutes
-In the meantime heat the olive oil on medium-low
-Fry the onion on medium for 3 minutes
-Add the tomato,black pepper,salt, cook for 10 minutes
-Squeeze out water from the bread, add to the mince,1 tbsp parsley,1 tbsp Parmesan cheese, minced garlic ,black pepper,salt and the egg, mix thoroughly, make small meatballs
-Add the meatballs to the sauce,water and the stock,cover and cook for 30 minutes
-10 minutes into the cooking time, gently turn them, cover and cook for the remaining time, stir every now and then
-They are ready, serve with pasta or with bread
-Enjoy

The Slow Cooker Meatball Stew that Everyone will Love
This slow cooker meatball stew is great for the slow cooker, the carrots, onions and mushrooms really do add to the dish and the red wine adds to the sauce.
This is perfect with pasta, but they also go well with potatoes and rice.
Serves: 3-4
Cooking Time: 8 Hrs
Setting: LOW
650g Beef/Pork Meatballs
2 White Onions
300g Grated Carrots
250g Sliced Mushrooms
Handful of Parsley
1 Teaspoon Garlic Puree
1 Tablespoon of Tomato Puree
1 Tablespoon of Paprika
1 Beef Stock Pot
200ml Red Wine

Meatballs are incredibly versatile and cheap. You can get really creative with them by adding all sorts of herbs and spices, but I went all Spanish today and made this Spanish inspired meatball stew. It's really easy to make, and can be rustled up in around 30 minutes, making it a great weekday meal for the family.

For the meatballs
►500g of pork mince
►2 tsp of smoked paprika
►Salt & pepper
For the sauce
►2x400g cans of whole or chopped tomatoes
►1 large green or red pepper
►2 large garlic cloves
►1 medium sized red onion
►1 whole chilli
►2 tsp of smoked paprika
►1x400g can of cannellini beans (or alternative)
►Salt & pepper to taste
►About 1 tbsp of olive oil
►Tope with grated Manchego cheese (optional)
Serve up with some rice, mash, chips or just some bread and butter

This recipe for Cajun Meatball Stew is straight out of south Louisiana. A family member gave me this cook book, Bayou Lafourche II, and this recipe was in it. I've modified it to my own liking, but just a little.
I also own the Bayou Lafourche I . Both are excellent cajun cook books. I'm not sure where or even if you can still get them, but if you are somehow able to find one or both of these books, snatch them up. You won't regret it. This is the best cajun meatball stew I've ever had.

IF YOU WANT TO MAKE AN OVEN ROUX:
Start out with 4 ounces of oil and 4 ounces of flour, by weight. Place the vegetable oil and flour into a 5 to 6-quart cast iron Dutch oven and whisk together to combine. Place on the middle shelf of the oven, uncovered, and bake for up to 1.5 hours, stirring every 30 minutes. Bake at 350° F . The longer you cook it the darker the roux. I've never had to go over 1.5 hours.
