vanilla

zucchini, grated
1/2
cup
nuts, chopped
FROSTING:
3
oz
cream cheese, softened
1
tablespoon
butter or oleo, softened
1/2
teaspoon
orange peel, grated
1 1/2
cup
confections sugar, sifted
1
milk, if needed
Directions:
CAKE: In a large mixing bowl combine sugar, oil and eggs, beating until well blended. Add All-bran, zucchini, orange peel and nuts. Add flour, mixed with baking powder, baking soda and salt. Blend well. Spread batter in a greased and floured 6x10x2 pan or baking dish. Bake at 325 degrees for 35 minutes or until tester inserted in center of loaf comes out clean. Cool completely.
FROSTING: In a small mixing bowl beat cream cheese, oleo and orange peel until light and fluffy. Gradually add the powdered sugar, beating until fluffy and spreading consistency. Add milk sparingly if needed.
Cover top of cake (still in pan) with frosting.

It's Zucchini season and you do know what to do with it? Well, let's make the best chocolate cake ever! This cake is so moist and so flavorful that no one would believe you put zucchini in it!
INGREDIENTS:
1 1/4 cups (160 grams) all purpose flour
1/4 cup (30 grams) unsweetened cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon salt
3/4 cups (150 grams) white granulated sugar
2 large eggs
1/2 cup vegetable oil
1 teaspoon vanilla extract
1 teaspoon ground ginger
1 large zucchini (300 grams)
1/2 cup chocolate chunks (preferably dark chocolate)

Orange Zucchini Bread
2 cups flour
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
2 eggs, room temperature
1 cup sugar
1/2 cup applesauce
1/3 cup vegetable oil
zest from one orange
1 Tablespoon orange juice
1/2 teaspoon vanilla extract
2 cups grated zucchini (washed and skin left on before grating)
1/3 cup raisins
for glaze
1/2 cup powdered sugar
2 Tablespoons orange juice
1 Tablespoon orange zest
Preheat oven to 350°
In a large mixing bowl, mix together Flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
In another bowl, whisk together Eggs, sugar, applesauce, vegetable oil, orange juice, orange zest, and vanilla extract. Pour it into the dry ingredients. Stir until combined and no lumps of flour remain. Stir and zucchini and raisins.
Grease a loaf pan with non stick cooking spray and line it with parchment paper. Leave some paper hanging on both sides to help remove the bread. Transfer the batter to the prepared loaf pan and spread evenly.
Bake for sixty minutes. Insert a toothpick in the center to see if it comes out clean to determine if it's done.
While the bread is baking prepare the orange glaze. In a bowl combine powdered sugar, orange juice, an orange zest. Stir until blended.
When the zucchini bread is ready, remove it from the oven and let it cool slightly, anout 10 minutes. Then remove the bread using the hanging paper.
Evenly pour the orange glaze over the bread. Let the bread cool to room temperature then slice and enjoy!

½ cup (115 g) vegetable oil
2 large eggs
1 cup (200 g) sugar
2 tsp (2 g) finely grated orange zest
1 tsp (5 mL) vanilla extract
1 ½ cup (225 g) all-purpose flour
1 tsp (3 g) baking powder
¼ tsp (1 g) baking soda
¼ tsp (1 g) salt
1 ½ cup (225 g) loosely packed, coarsely grated zucchini
½ cup (88 g) milk or dark chocolate chips (optional)
Directions
1. Preheat the oven to 350 F. Grease a 9-x-5-inch and line the pan with parchment paper so that it comes up the sides.
2. Whisk the oil, eggs, sugar, zest and vanilla together in a large bowl.
3. In a separate bowl, sift the flour, baking powder, baking soda and salt. Stir in the zucchini to coat it with the flour and add this to the wet mixture, stirring until blended. Stir in the chocolate chips (if using) and scrape the batter into the prepared pan.
4. Bake the loaf for 50 to 60 minutes, until a tester inserted in the centre of the cake comes out clean. Cool the cake completely in the pan until turning out to slice.
5. The loaf will keep, well wrapped, for up to 3 days, and can be frozen for up to 3 months.
