Sloppy Joe and Macaroni Casserole

Ingredients
3 tablespoons dark brown sugar
3 tablespoons red wine vinegar
3 tablespoons Worcestershire sauce
One 15-ounce can tomato sauce
2 tablespoons EVOO
1 1/2 pounds ground beef (80-to-85-percent lean)
Kosher salt and freshly ground pepper
3 to 4 cloves garlic, finely chopped
1 red bell pepper, seeded and finely chopped
1 onion, finely chopped
1 cup beef broth
12 ounces elbow macaroni with ridges
2 cups shredded yellow Cheddar
1/2 cup chopped crisp deli-style dill pickles
Directions
Preheat the oven to 400 degrees F.
Combine the brown sugar, vinegar, Worcestershire sauce and tomato sauce in a small bowl. Heat the EVOO in a large skillet or Dutch oven over medium-high heat. Add the beef and cook until well browned. Season with salt and lots of pepper. Add the garlic, bell peppers and onions and cook, stirring, for 5 minutes. Pour the tomato mixture over the beef, add the beef broth and stir until well combined. Simmer until thickened, 5 to 10 minutes.
Meanwhile, cook the macaroni in a large pot of salted boiling water until not quite tender, about 5 minutes. Drain and add to the sauce. Pour the mixture into a casserole dish and top with the cheese.
Bake until the casserole is bubbling and the top is browned. Top with the pickles and serve from the dish.
Cook's Note
The unbaked casserole can be covered and refrigerated for a make-ahead meal. Bring to room temperature and bake as directed before serving.

Sloppy Joe-tatoes | Easy Dinner Idea
Today I'm making my BBQ Sloppy Joes over baked potatoes--Sloppy Joe-tatoes! I've had many requests for more easy dinner ideas on my channel, and this one fits the bill--enjoy!
Sloppy Joe-tatoes
4 russet potatoes
4 tsp. olive oil
kosher salt
black pepper
butter
1 lb. ground beef
1 small onion, diced
1-8 oz. can tomato sauce
1/4 c. brown sugar
1/2 c. ketchup
1/4 c. apple cider vinegar
1/4 c. molasses
1 tsp. ground mustard
1/2 tsp. garlic powder
1/2 tsp. onion powder
1 Tbsp. Worcestershire sauce
shredded cheddar cheese for garnish, optional
Preheat oven to 400*. Scrub potatoes well then dry. Poke holes in the tops of each potato. Rub each potato with 1 tsp. of olive oil then sprinkle the tops with kosher salt. Bake at 400* for about 1 hour or until a knife or fork inserts easily into the center of the potatoes. Slice open, spread with butter, sprinkle with salt and pepper, and fluff the insides of the potatoes with a fork.
While the potatoes bake, prepare the bbq sloppy joe mixture. In a large nonstick skillet, add the ground beef and onions. Break up the ground beef and cook over medium heat until brown and the onions have softened. Remove excess grease from the skillet. Add the tomato sauce, brown sugar, ketchup, apple cider vinegar, molasses, ground mustard, garlic powder, onion powder, Worcestershire sauce, and a dash of salt and pepper. Stir to combine, Cover and simmer over low heat for 15 minutes, stirring occasionally. Spoon 1/4 of the sloppy joe mixture over each baked potato and top with shredded cheddar cheese if desired. ENJOY!

Sloppy Joe Recipe
INGREDIENTS
8 oz can tomato sauce
1 cup low sugar ketchup
1 tablespoon dried minced onion
1 tablespoon green pepper, diced fine
1 teaspoon salt
1/2 teaspoon dried minced garlic
1/4 teaspoon celery seed
1 teaspoon prepared mustard
1/2 teaspoon chili powder
1 pound ground beef
6 hamburger buns
DIRECTIONS
Brown 1 pound ground beef, drain the fat. Add the sauce to the meat and bring to a boil. Reduce the heat and simmer for 10 minutes. Serve with toasted hamburger buns.

This homemade sloppy joes recipe has all the best parts of the classic recipe we loved as kids: perfectly seasoned meat, a toasted bun and a little messiness with every bite. It’s an easy favorite for a party or a quick weeknight dinner.

INGREDIENTS
1 pound ground beef
2 tablespoons butter
½ cup finely chopped onion
8 ounces tomato sauce
½ cup ketchup
3 tablespoons brown sugar
1 tablespoon prepared mustard
2 tablespoons Worcestershire sauce
1 tablespoon white vinegar
½ teaspoon salt
¼ teaspoon pepper
½ teaspoon garlic powder
½ teaspoon onion powder
Softened butter to toast the hamburger buns 1-2 tablespoons

INSTRUCTIONS
Brown the ground beef in a large skillet, drain the extra grease and remove the ground beef and set aside.
In that same skillet add the 2 tablespoons of butter and melt over medium high heat and add the onions and saute until transparent, about 3 minutes.
Stir in the ketchup, brown sugar, prepared mustard, Worcestershire sauce, vinegar and spices.
Bring to a boil, reduce heat and simmer 5 to 7 minutes. Watch for bubbling and splattering tomato sauce!
Add the ground beef to the sauce in the skillet and stir together and cook until all is reheated.
Butter the inside of the buns and toast them on a griddle pan.
Spoon the meat mixture on to the prepared buns and enjoy.
