So here's what you're going to do: rub your meat with olive oil and liberally season all sides with your favorite beef rub. Set up your grill for two-zone indirect cooking with coals on one side and a water pan on the other; remember to adjust your grill vents to achieve a cooking temp around 275°F, alright? Place the meat on the indirect cooking side, smoke until IT reaches 125°F, then remove the meat from the grill. Meanwhile, add charcoal and oxygen to increase the intensity of your fire. Once the fire is blazing, return the meat to the grill and directly sear on all sides until 135°F IT for a perfect medium rare. Remove and rest for at least 30 minutes before slicing - and that's it!
