How to Make Classic Rum Cake | MyRecipes

This moist, rich rum cake is great to make ahead for special occasions or as a food gift. It tastes even better the next day.
1 1/2 cups butter, softened
1 1/2 cups granulated sugar
3 large eggs
1 egg yolk
2 teaspoons vanilla extract
2 tablespoons grated lemon rind
1/2 cup dark rum
1/4 cup banana liqueur
3 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/8 teaspoon salt
1 cup whipping cream

EASY Baking: Coffee & Rum Cake!
A boozy, sticky fingered affair that has a rich batter infused with cinnamon, brown sugar and dark rum. The kind of cake that oozes with rich sweet flavour, perfect for when visitors are allowed to return.
Serves: 12
Ingredients (US & METRIC):
375g/ 13 oz plain flour
2 tsp baking powder
½ tsp fine sea salt
5 large free range eggs, beaten together
100ml/ 3 fl oz dark rum
2 tsp vanilla bean paste
120g/ 4 oz natural yoghurt
350g/ 12 oz unsalted butter, softened & extra for greasing
275g / 10 oz unrefined caster sugar
1tsp ground cinnamon
3 tbsp soft dark brown sugar
3 tbsp pecans, chopped
For the coffee glaze:
50g/ ½ stick unsalted butter
40ml/ 1.3 fl oz espresso
30ml/ 1 fl oz rum
½ tsp vanilla bean paste
200g/ 7 oz icing sugar
For the caramelized pecans:
3 tbsp light brown sugar
50ml/ ¼ cup water
3 tbsp pecans, roughly chopped

Rum Cake is the most tender, moist, and mouth-watering cake that is drenched in rum flavor that balances the sweetness.
The best part, this marvelous cake is completely made from scratch, interesting, right?
The use of Dark Rum adds a nice smoky and intense flavor in the cake, which makes it irresistible. It also makes this cake flavorfull, moist, and adds a tender crumb to your cake.
The base of rum cake is prepared using all-purpose flour and other basic ingredients that are used to make a cake. It is then drenched in a rum syrup, which creates the magic. The rum syrup is made using dark rum, butter, sugar syrup, and water.
Not only house parties, but this also is a delightful dessert to serve for weekly family dinners, fancy dinner parties, or Christmas/holiday celebrations. Also for birthday parties, maybe just for adults. HAHA!

Ingredients
This old school sponge cake is made with regular ingredients such as,
Dark Rum – This is the star ingredient, that makes this rum cake unique and different from others. It has a bold rum flavor, that tastes just amazing with the moist and spongy cake.
Make sure to use a good quality rum for the best taste.
You can use any dark rum you like the most for this cake. I used Old Monk which is my all-time fav dark rum.
You can also use Bacardi dark rum or Meyer’s dark rum. Spiced rum-like captain morgan or coconut rum like Malibu also works well in this recipe. You can also use half malibu and half white rum or only white rum to make this cake.
Walnuts – To add a little crunch, I have added walnuts. You can also go for pecan or even almonds.
Other Ingredients – Other Than dark rum, we will need basic ingredients required for baking a cake, such as – all-purpose flour, corn starch, baking powder, unsalted butter, granulated sugar, eggs, milk, and vanilla extract.
You can also use other flour such as whole wheat flour for a healthy alternative, but the taste and texture will differ a bit.
Baking Powder helps the cake to rise. You can also substitute eggs with other ingredients such as yogurt, applesauce, ground flax seeds, etc for an eggless version.
You can also add orange zest or lemon zest in this cake batter, to make it extra taste and flavourful.
Rum Cake
This easy rum cake recipe makes a delicious, buttery, melt-in-your-mouth bundt cake with lots of rum that's soaked and topped with a decadent butter rum sauce. Its most popular during the holidays but you can make it anytime!

Fruit Blend Recipe
You may allow your fruits to sit in your refrigerator overnight up to 1 year before baking into your cake. I allowed mine to soak for 3 weeks this time.
1/2 cup raisins
1/2 cup currants
1/2 cup prunes
1 cup glazed cherries
3 oz Wray & Nephew rum
8 oz Red Label Wine
Cake Recipe
2 cups unsalted butter
2 cups brown sugar
1 tbs orange zest
2 tbs lime juice
8 eggs
2 1/2 cups all-purpose flour
1/2 tsp salt
1 tsp ground clove
1 tbs ground cinnamon
1 tbs ground nutmeg
1 1/2 tsp baking powder
1 tbs pure vanilla extract
3 cups fruit blend
5-6 tbs browning
1/4 cup red label wine
You may bake this recipe in a 10” x 3” round baking pan or a 9” bundt pan.
Bake at 350 degrees for 1.5 - 2 hours.
