Banana Nut Muffins
Makes 12 muffins
Ingredients
• 1 ½ cups all purpose flour
• ½ tsp baking soda
• ¼ tsp salt
• ¼ tsp cinnamon
• 3 large ripe bananas
• ½ cup vegetable oil
• ¼ cup milk
• ¼ cup packed dark brown sugar
• ½ cup white granulated sugar
• 1 large egg
• 1 tsp pure vanilla extract
• ¾ cups toasted walnuts for batter
• additional ¾ cups toasted walnuts for topping
Procedure
1. Whisk together flour, baking soda, salt, cinnamon in a medium sized bowl, and set aside.
2. Mash the bananas in a large mixing bowl. The size of the bananas might vary, so add more if the bananas are small. Add vegetable oil, milk, sugars, egg, and vanilla extract. Whisk together until well-incorporated.
3. Fold in the flour mixture into the wet mixture until well-combined. Do not overmix.
4. Add half of the walnuts and mix together.
5. Divide the batter by 12 in a muffin tin (spray with cooking spray if you do not use liners).
6. Sprinkle the walnuts on top of the muffin batter.
7. Bake at 350 F for about 25 minutes, or until a toothpick in the center comes out clean.

⭐食譜内的鷄蛋是大鷄蛋,每個大約60g。
⭐食譜内的紅糖如果不容易融化,可以放進混合了速溶咖啡的牛奶裏稍微加熱融化,放涼後使用。
⭐食譜内的葡萄籽油可以用蔬菜油代替。
⭐核桃碎可以先用180℃/350℉烤6分鐘,放涼再混入麵糊裏就更加好吃。
⭐在烘烤之前必须预热烤箱达到设定温度。
⭐因為每个烤箱都有所不同,在配方裏的烘烤温度和时间仅作参考。請大家从烤箱中取出Muffin之前,最好先用竹簽從Muffin最厚的地方插到底,拔出來非常乾净,才取出Muffin,否則需要繼續烘烤。
⭐如果Muffin上色比較早,可提早在Muffin上蓋上一層烤爐紙,繼續用原來的溫度烘烤。
⭐Muffin烤好放涼后,用塑料袋裝起來放到明天依然柔軟。

Ingredients:
1.5 c whole wheat flour
0.5 c sugar
3 ripe bananas
0.25 tsp cinnamon
1.5 tsp baking powder
0.5 tsp baking soda

1 TBSP maple syrup
